I guess my questions would be the obvious ones. Is this chicken you are fixing for yourself at home? Is there any other kind of ingredient that is common? Or are you talking about plain, no other ingredient, grilled or baked chicken? What about the spray-on oil? Some brands have wheat in them! My suggestion would be to have your dining cards in Spanish. Ant even then, I would think the nicer places will have chefs more familiar with special needs. Don't be afraid ti speak up as you order and ask plenty of questions. I would think either place is used to tourists and speak English well enough, but you will put them more at ease if you have the dining... -

Thanks for the heads up! I buy walmart brand stuff often. Probably wouldn't have thought ti look at a bag of just veggies. I too am bothered by stuff with those kind of claims. Have to say I'm disappointed to see we cannot get away from snippy drama in a group like this. -

Yep, rice is on my no-no list also. It really sucks as rice is a major alternative to the wheat in the gluten-free stuff! Like the previous poster, I can have a little of it once in awhile. 3 pieces of tapioca bread (which has rice flour in it) is ok, but 4 puts me over the top. Sorry to hear about your little one. You really don't need to do anything. I went thru all that and none of the things I had discovered was bothering me showed up on the test. And a few things that did had never given me problems! To say my confidence in the medical community is pretty low is an understatement. In the end, it will be up to you to monitor and know your own body.

I'm having computer issues, so sorry if this doesn't look write or post correctly. I cannot stand the taste of soy flour. That strong bean flavor just ruins everything I try it in. Not really, but I do take a daily supplement of acidophilus and if I suddenly feel I'm having issues I take a second supplement at the end of the day and it seems to help it all pass quicker

I am not a diagnosed Celiac. I believe myself ti be gluten-intolerant. I've been afraid of that very thing, as I am intolerant ofany things, leaving my choices few. If I ever start having problems with corn or soy, I will be in big trouble. But, so far, so good. I've been doing this for about 3 yrs. -

Another thought. Food services often use packaged frozen foods and some things like potatoes are often dusted with different flours to helps with thing like sticking together when frozen and also in coloring nicely whe cooked. Some use wheat flour and rice flour is common. I am also rice-intolerant so it's something I've learned to ask. -

We also go to Costco as often. I am also dairy-intolerant so your options are not mine. But I get a simple hot dog or polish sausage with no bun or one of their berry smoothies. It is dairy-free. -

I was much like you about 4 yrs ago. Sounds like your 'gut' needs healing first so you can digest some things. My doc suggested eating probiotics in yogurt for 2 wkd but I was also dairy-intolerant. It took awhile to find allergen-free supplements and vitamins at www.kirkmanlabs.com. I took a double dose of acidolphilus for 2 wkd and could tell a difference... -

Which really does suck as alot of gluten-free products relies on rice flour, rice milk, etc. I don't recall it having gluten in it but that was way back when I was just learning and going thru the elimination thing. I suspect you have what wis called a "leaky gut", which means the lining in your intestines are damaged to the point of having some holes. I read it explained as Swiss cheese. It's not unusual for peoe with Celiac or intolerances to develop this before knowing they have these issues. Since we have damaged villi and low/no good bacteria in our intestines...

Boy I second and third and fourth the PIZZA!!!!! I, too, cannot do the cheese or even the egg in the bread besides the gluten!! If I had a last meal....it would be TONS of PIZZA!!!!

I've never experienced problems with canned or frozen veggies. I suspect you may have experienced cross-contamination in some way from your kitchen or other foods.
