  3. Try Annalise G Roberts book that I mentioned above. I haven't had a problem with hers yet. I don't like the sandwich bread because of the millet flour but everything else has been good so far. She uses xanthan gum but it's always a tiny amount like 3/4 tsp. Some recipes don't even call for it.

  6. According to the Canadian celiac association tocopherols are safe. I've never had trouble with them and I'm crazy sensitive. They are in almost all shampoos and soaps and tough to cut out.   14. Oh there is an upshot. They gave us $90 in gift certificates and .... the waiter just graduated with a marketing degree. Somehow got to talking to my husband while they were waiting for me. He offered to give me free marketing advice for my business to make up for it because he felt so bad.

  22. Cooking is really easy. It's baking that's not as easy although I've made it easy on myself. You can use rice flour to thicken any sauces just like wheat flour.   24. I go for acupuncture and it totally relieves the symptoms! I can go in there feeling awful and walk out feeling better. It will not cure you, but a good acupuncturist can strengthen your immune system and help heal the other damage that has been done to your body due to inflammation and malnourishment associated with celiac disease.   25. When your villi are damaged you aren't absorbing nutrients and you are malnourished no matter how healthy you eat. So when you quit eating gluten and the small intestine heals, you actually absorb what you eat!
