  1. It's my favorite cake mix. Use real butter and it will turn out fine.
  2. Oh sweetie we understand!! We have all been there. You look very young on your picture and that is a big plus for you. You started feeling better within six weeks. That's a miracle really! And you are adorable, another big plus! Those of us like me who got diagnosed at 40 and whatnot took six MONTHS to feel better! I had symptom relief right away but...
  3. Have you tried taking iron supplements? My thryoid levels were normal but my fatigue was horrid. Then I took iron pills and I was a new person. I don't take them all the time. I take breaks and then go back on.
  4. It was six months before I had one symptom free day. I was on a simple clean diet for quite a long time. It does get better!
  5. Yeah I think I did get glutened. Darn those cookies were GOOD! Oh well. No more of those. I am very sensitive now, so it was probably crazy of me to try them. I even thought "Hmm maybe these are dangerous" and then I took a walk on the wild side. I hope it is a glutening because that will go away soon. If it's colitis again then it might be ulcerative...
  6. It sure is frustrating! They gave me two types of IV antibiotics for 2 days in the hospital and they helped a lot until now. But my blood tests were all negative for infection so what does that mean? The doctors had no explanation, not the ER doc, the hospital doc or my doc. My white blood cell count was normal. They cultured my stool and it was all negative...
  7. It sounds like your GI did thorough testing but she isn't knowledgable about what happens after you go gluten free. It can take months for the symptoms to go away. You are a baby celiac, so new to the diet. Just a few weeks. It took me six full months to have ONE symptom free day. That's pretty common. At least 2 or 3 months, especially if you are an adult...
  8. I had very bad colitis a few weeks ago and ended up hospitalized for it. It was so painful I went to the ER and they put me in the hospital for 2 days on massive antibiotics even though they weren't really sure if it was bacterial. My CT scan showed massive swelling on my left side of my colon. All my blood and urine labs were normal. The antibiotics helped...
  9. How long have you been gluten free? You can be experiencing withdrawals still. I'm the product queen and I am a big believer in avoiding gluten in them. The only gluten I ever see in anything is listed as wheat something or other... wheat germ oil, wheat germ extract, wheat protein, etc. It's often in shampoos, conditioners, soaps and lotions. Lipstick...
  10. I wanted to strangle the little boy on my son's baseball team who thought it was funny to shove gluten in my son's face and say "here! eat it!" after DS said it would make him sick. And some (insert curse word) who told me I was a picky eater! I managed to correct her in a long winded boring lecture about diarrhea for days and vomiting while she ate her...
  11. There is waaayyyy too much fear out there and way too many myths that need to be myth busted.
  12. First of all make sure you are eating enough. I think I read on the thread you are just days into the diet right? Your body needs A LOT of fuel to do all the healing and fixing it needs to do. You need a ton of rest. I spent a lot of evenings and weekends in bed when I was healing. Hubby just had to take the kids so I could rest. Dehydration is a big...
  13. I never thought of it as OCD but maybe it is. I had those swirling thoughts too. I would get anxious about something and think about it all the time. I hardly do that now. Once in awhile if it's something very stressful, but back then on gluten it would be over things that really didn't warrant that much attention.
  14. Mixed home did not work for me. I had to put everyone on gluten free to save me from being sick all the time. You said "mum" so I'm thinking you are in the UK. I don't know if you can get this, but Gluten Free Pantry Basic Sandwich bread can be made with oil and water instead of butter and milk. The ingredients are simple which is why I first tried it...
  15. You poor thing! I think we all try to keep cooking gluten for others in the beginning. But if you serve them gluten free noodles, they will love it and all of you will eat together! My son and I have celiac but hubby and daughter are gluten free. I made scrumptious gluten free orange muffins with an orange glaze this morning and they went nuts over them...
  16. I second the lactose and the CC. You DO have celiac. A positive blood test means you have celiac! They endo can have a false negative. The intestine is so long and they only take about 4 microscopic pinches for the endo. I think odds are well against them finding the damaged spots. It's like they throw darts in a dark closet! Don't get me started on how...
  17. Hopefully your test will come up positive and you won't have to worry about it. Also know that not all docs know how to read the results. Insist on seeing your labs. Only one of the five panels needs to be off and it can only be borderline and that makes you celiac. There are no false positives with the test. I was sick to the point of feeling like I was...
  18. Most celiacs are underweight. That's the classic "type" for a celiac, so yes of course they gain weight! They need to! Their bodies are absorbing nutrients finally and they are able to keep weight on. They should've reported whether it was unhealthy weight gain or necessary healthy weight gain. I had the opposite, the celiac where I was gaining weight...
  19. My OB thought I had celiac 8 years ago. Sent me to a GI doctor and he said there was no way I could have celiac disease because I was about 25 pounds overweight. He talked me out of even the blood test! That jerk could have saved me 7 years of suffering, two horrific pregnancies and a baby born a month early. Yes celiacs can be overweight! I went to a...
  20. I'm surprised that some people on the thread were suggesting you serve gluten at the party. Somebody said something about "extending the courtesy" to give them food they can eat. There is no way I would let a large group of people contaminate my house. It could take weeks to get all that gluten out of your house. Gluten does cross my doorstep. I entertain...
  21. They wash the lines between batches and throw out the first two batches? There is NO way you are getting CC'd by their chocolate in my opinion. I eat Ghirardelli and I am really sensitive. I have never had a problem with any of the chocolate squares or bars. Obviously I don't eat the ones with malt crisps. I love the little squares for a small treat when...
  22. Oh my gosh, the fact that you are a college student and doing gluten free to the point you have is incredible! Be so proud of yourself. Now this is your next step. Don't give it all up but make compromises. Find a few go to drinks that you can have and make sure you have them at parties. Keep a stash if you need to. Take the time to call restaurant...
  23. I don't even consider it "self diagnosis." Any doctor with half a clue when it comes to celiac (most of them are minus a few in the having a clue department) will use dietary response as a diagnostic tool. There is no way that you would have those dramatic results from a gluten free diet if you did not have celiac disease. Let me give you a word of...
  24. Betty Crocker mixes are great. So are Gluten Free Pantry. Marshmallow fondant tastes great over buttercream icing and it gives it that professional appearance. Marshmallow fondant recipe Put one bag mini marshmallows in a big bowl with a tablespoon of water. Melt in microwave about 30 seconds at a time until they are all melted and you can stir them...
  25. I'm sure it will go away. Our bodies do bizarre things when we are in withdrawals and detoxing. I had very strange things happen. I was pooping like 10 to 12 times a day for about 3 weeks. I would get shaky and dehydrated easily. I had odd pains and brain fog. I had about 2 weeks where I just couldn't eat anything without feeling sick. Then it went away....
