  1. graphic but so true. I feel like someone is twisting a sharp knife in circles.
  2. I just had a gluten free birthday party for about 20 people. I made Tinkyada pasta, cut up cubes of Mozzarella, mixed in the mozzarella and pasta sauce with the pasta. Covered it with slices of provolone. Baked for about 25 mins at 350 until cheese was melted. Served with salad, cut up fruit. Since it was a party I did tortilla chips and salsa and Kettle...
  3. You are sweet to worry that they will be offended when they are being so supportive. But... stop it! LOL You have an autoimmnune disorder which means that your body is attacking your intestines when you eat gluten and causing destruction in there. You might as well eat tiny little grenades. So... people who love you would never want to set off tiny grenades...
  4. Change of season is hard on the body. I always get sick when seasons change unless I get acupuncture. I get a treatment to balance me out and get me ready for the change and it totally works. Breathe and relax jason. You've made tons of progress and you will not go back to the way it was before. It's okay to have a bad or two or three.
  5. I threw a big birthday party for my 3 year old yesterday. Did the whole thing gluten free and the gluten eaters loved it. I made baked Ziti from Tinkyada pasta. Just threw in sauce, cubed mozzarella and then covered with provolone and baked it. Two big pans GONE. Then I put out salad, veggie tray, fruit tray, chips and dips. I spent 6 hours making...
  6. Okay first of all, not sure how you got diagnosed but if you are self diagnosed, then here's your confirmation that gluten is BAD for you. So... don't tell people your diagnosis story if you are self diagnosed. It's okay to lie and say you had a blood test or whatever to get people to take it seriously. Nobody but you knows how it happened. That being...
  7. You have to find a way to control your fear or this disease will ruin your life and it shouldn't. You got sick from eating something that had gluten in it, not from touching doorknobs and the hotel room. Frequent hand washing. Wash hands before you eat. Don't touch your mouth (it will give you colds anyway.) If you can't control the fear then maybe...
  8. If you haven't been getting sick don't worry about it. We live in a gluten filled world and you won't be able to keep it away from you when you are out of your house. Wash your hands before you eat and maybe wipe down your desk before you eat at it as a rule because kids have gluten on them all the time, on their hands etc. Keep a big jar of wipes and...
  9. Not sure if you are getting testing done or if you are just doing to diet and seeing if it helps you, but regardless. Do yourself a favor and if you find you have celiac either by self diagnosis or whatever don't tell people the details. Nobody needs to know you are self diagnosed or whatever. Tell them you have celiac. If you have to, lie and say you took...
  10. Please please do not go in there and threaten to sue him or something like that. Restaurants to do not have to accommodate anybody's allergies. They do it to be helpful as well as bring in a larger customer base. If people start threatening restaurants they will all just quit offering it. If I owned a restaurant honestly I would be scared to offer anything...
  11. You can eat plenty of grains on a gluten free diet, just not those pesky three. That doctor is a total idiot and (insert many curse words) like him are the reason so many of us suffered needlessly for years. SEVEN years ago my OB said I had celiac and sent me to a GI for testing. He acted the same way as that stupid (insert curse adjectives here) doctor...
  12. Well God certainly understands. But the pastor needs to understand and help you deal with it. In our church the juice is put in tiny little cups and you take a tiny cup as the tray is passed to you. If I forget to bring my own gluten free bread I just take the cup. But our communion is taken at our seat not up in front of every one so that makes it easier...
  13. Wow 2 weeks? Is there a chance it was contaminated? Goat cheese carries lysteria among other things. Look up lysteria and see if those are your symptoms. That's why pregnant women can't eat it.
  14. I post this all the time but Gluten Free Pantry's basic white bread mix is AMAZING. So "normal" tasting, makes a nice big loaf and holds together nicely for a sandwich. Their french bread and pizza mix is great too. Makes wonderful pizza crust.
  15. I have tried dairy a few times thinking it was fine until the next day when I woke up bloated as heck. Ugh. I have been dairy light or dairy free for years and I'm just getting tired of it. I had substituted soy stuff and then realized after going gluten free that soy was bothering me so badly. My nose swells shut when I eat soy in addition to the gut pain...
  16. I hate it that I have dairy and soy intolerance. It is so depressing to have to eliminate such pervasive ingredients. My life would be so much easier if I could grab some string cheese or yogurt as a snack, or make sumptuous gluten free pizza or quesadillas at home without getting bloated, crampy and nauseous. Soy, forget it. I get stabbing gut pain that...
  17. I did not start improving greatly until I got rid of all the shampoos, etc that contain wheat. It runs down your face in the shower, gets on your hands and is just darn hard to keep out of your mouth.
  18. I had bad mornings for months. I'm a stay home mom and I wouldn't make any plans before 11 for a long time. It was so hard to get up and deal with my poor kids who got the short end of my gluten free stick cuz I had nothing left for them. My biggest problem was dehydration and once the doc pointed it out to me things started to improve. I drank a bottle...
  19. My last gluten meal was at an all you can eat pizza place and I ended up nearly passing out from the dizzy spells, having every heart attack symptom on the list including shooting pain down my left arm, etc and ended me in the ER thinking I might die. When my husband dropped me off (no sitter and they wouldn't let our small kids come in cuz of germs) I told...
  20. Number one I ALWAYS use the word allergy. That word scares them and makes them think of people blowing up with hives and stopping breathing. We are there the save our butts from glutening not educate the world about the difference between an autoimmune disorder and an allergy. We can do that elsewhere but not at a restaurant where we want to eat their food...
  21. It will get easier. There is a grieving process because it's hard to lose all those foods you love. You'll develop a taste for the gluten free stuff and you'll find great substitutes. I love Glutino brand things. They are expensive but good. Their crackers are really good especially the plain ones. Kettle chips and kettle baked chips are gluten free....
  22. I would pretty much call that celiac disease. But I don't believe in gluten intolerance. In my opinion and the opinion of quite a few others on the board gluten intolerance is either baby celiac waiting to explode or the people just weren't diagnosed properly. It's splitting hairs. As long as you are doing the diet that's the most important, but it's just...
  23. I ate from the gluten free menu at Buca di Beppo. After dinner I started feeling quite nauseous and I still feel that way plus I'm very bloated. I have no other symptoms so I don't think I'm glutened. When I get glutened I get neuro issues first- panic, shortness of breath, dizzy spells and then the tummy stuff later. Can garlic make you nauseous or can...
  24. Happy celiac birthday!!!!! Here's a toast with some wine since it's gluten free. {{clink}}
  25. That's so silly. I can't imagine any wine maker worth their salt using old whisky barrels and well like others said, whisky is generally fine anyway. Flour on corks- most corks now aren't even made of "cork" anymore. They're that plastic type stuff. Not sure what it is, but I guarantee there's no flour on it.
