Usually the wheat mash is a treat or used as a supplement and most people add water to it so it's not really flying around dry all over the place. You can see if it got on the ground near where you are grooming the horse and wash it away from the mats beforehand. I wouldn't let that stop her from riding. -

About the allergy testing, the best thing to do is get skin testing and blood. Testing for food allergies can be difficult sometimes and you can come up negative but still have symptoms. The wallpaper paste thing cracked me up! There are many cultures in the world who don't have the high gluten diets that we have. And in the past our diets weren't as gluten heavy as they are now because there weren't as many additives in foods. If there weren't so many gluten based additives the diet would be so much easier!!! -

I wanted to add that if I were you I wouldn't tell family and friends you are self diagnosed. Tell them you have celiac disease. They don't need to know all the details. -

I'm trying to imagine a scenario where docs wouldn't treat you based on your gluten free diet and I can't think of one. If you get sick down the line, then that will be a new illness and they have to treat it. It takes you SIX MONTHS to see a specialist??? That's just horrible. Here in the U.S. it takes a couple of weeks, maybe a month if it's a doc who is in high demand, but even then they will get you in if you are sick. Pei Wei has a gluten free menu. I haven't tried it but I did hear that it's good. I guess there is always a possibility of flour in the curry as a thickener, or coated on the steak and chicken in the Mexican food, but for the steak and chicken I don't think it's likely.
