  1. How coincidental that you posted this now as I just devoured one of the cupcakes that I took out of the freezer before dinner. It is absolutely fantastic and probably the best I've made so there's definitely no problem using that recipe, frosting them and then freezing. And for anyone on a budget or feeding a family, they're really inexpensive to make....

  6. It sure does or they simply don't want to deal with the answers they get. We also have a number of people come on and post once or twice and then simply disappear never to be heard from again.
  7. I really don't understand the science/chemistry of gluten-free baking so have stuck to either using a mix or a gluten-free recipe to begin with. I've never tried to convert a regular recipe to make it gluten-free. There's a lot of differences in gluten-free flour mixes, too, so I try to stick with what the cookbook author recommends.
  8. I was just browsing on Amazon and noticed that today they have the KitchenAid Artisan 5-qt. Stand Mixer for $199.99 with a $30 mail-in rebate. It appears that this price is for the white mixer only although several other colors are available at different prices and also qualify for a rebate. The rebate is good through March 24.   9. I also used one of Annalise's recipes for Open Original Shared Link. I was very pleased with how they turned out in spite of the fact that I had to make up my own Open Original Shared Link. Would love to try the Authentic Foods blend she uses but it's nowhere to be found around here and way too expensive to order online (for my taste at least).
  10. I made cupcakes the other day and frosted them with Betty Crocker gluten-free frosting and stuck them in the freezer. After they were completely frozen, I covered them as the frosting was hard by then. I did bake them in the baking cup liners. Worked great.
  11. I have Annalise Roberts' cookbook Gluten-Free Baking Classics in which she has a recipe for a Lemon Pound Cake that sounds similar to what you want. I found Open Original Shared Link by doing a google search. In her cookbook the recipe calls for 2/3 to 3/4 cup of fresh dry blueberries stirred in before putting the cake in the pan.   13. I've never bought gluten-free waffles as I figure anything I make myself is so much better than any processed gluten-free product. Have you ever thought of making your own? They're really simple. Thus far I've used gluten-free Bisquick and Pamela's Baking & Pancake Mix. Recipes on the box/bag. Unless you go all out for something fancy schmancy...

  16. I'm looking for a plain ol' toaster...the pop-up kind. I don't need the bread to automatically lower itself or any fancy bells and whistles...no blinking lights or alarms to tell me that it's done. I had one that had a single long wide slot and now they're hard impossible to come by. It has to fit in my appliance garage so I don't want a toaster oven....

  19. Welcome to the forum, Joyful! I think reactions differ a lot from person to person so no two people necessarily experience the same symptoms. But you do need to avoid barley in addition to wheat and rye and many also avoid oats for awhile, even if they are certified gluten-free (you may be able to add them in later).
  20. I was never fond of Cream of Wheat but do like Cream of Rice and think the texture is probably similar. Some people also eat Pocono Cream of Buckwheat but I haven't seen it around here.

  23. I believe the gluten-free cycle just eliminates the second rise as it's just not needed for gluten-free bread. That said, I don't have a bread machine although I debated getting one when I went gluten-free.
  24. I'm looking for the same thing! I've bought two toasters since I went gluten-free and don't like either one of them.
