Welcome, Mateto! You've come to the right place to learn about gluten-free foods and other questions you may have about celiac. Are you going to have an endoscopy/biopsy? If so, make sure you continue eating gluten until after it's done. I went gluten-free the day of my endoscopy and have learned an awful lot from this forum. I'm sure it was quite...

ARCHIVED May Have Just Eaten Gluten :p
sa1937 replied to Victoria6102's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Utz is the brand of chips I always buy and I've never had a problem with them. Wish I could contain myself to having just two chips! I just get the plain chips though and my bag does not have the "may be processed on equipment that also processes wheat" statement on the back. What kind of Utz chips did you buy? Are you feeling okay this morning? -

ARCHIVED A Few More Baking Failures
sa1937 replied to sa1937's topic in Gluten-Free Recipes & Cooking Tips
Thanks, I am doing well except my eyes are really irritated and I'm trying to limit computer time...have a follow-up appt. this morning as the pressure was also up in my left eye in spite of having laser surgery for glaucoma in the past year. Argh! And if it's not one thing, it's another and I'm also waiting to have a root canal. While I've gotten over... -
While those of us who are either new to baking or have been at this for awhile, have baked a few bricks and blobs, you might be interested in knowing we are not alone. Here are some examples from the pros at Open Original Shared Link.

ARCHIVED Do gluten-free Flours Really Need To Be Refrigerated?

BeFree, what does the flour smell like? I think you could detect if it had a rancid smell. -
ARCHIVED What Are Your "glutened" Symptoms?
sa1937 replied to LauraZ's topic in Coping with Celiac Disease
Sorry that you are not feeling well and hope you get better soon. Our bodies can be pretty wonky and we can react to most anything or you may have had the flu since it is flu season. Coke is gluten-free regardless of what "everyone" says...who is everyone? I drink Coke Classic and have no problem with it. But I don't drink a lot of it. Some people... -
ARCHIVED Best Kid Cookbook?
sa1937 replied to mamaupupup's topic in Parents, Friends and Loved Ones of Celiacs
What are the ages of your girls? That might help someone to make a recommendation. My 13-year old granddaughter loves to cook when she's here (with supervision, of course). She's become quite the cupcake and muffin baker as well as pizza maker but uses my cookbooks. -
ARCHIVED Betty Crocker Frosting..
sa1937 replied to Jamie's topic in Gluten-Free Foods, Products, Shopping & Medications
Please note that this thread is from 2009...rather old and ingredients do change from time to time but General Mills is one company I trust. I use Betty Crocker gluten-free frosting without a problem. Their gluten-free frostings are well marked. If you're new to the gluten-free diet, you could be reacting to most anything as our bodies are pretty wonky... -
ARCHIVED Large Danish Dough Wisk

Is this the kind of whisk you're referring to? Open Original Shared Link Alice, I don't see that you have been warned for anything. We all have a "Warn Status" area under the date we joined...but yours is blank. If you had been warned, it would have a line on it and you would have been notified as to why you were warned. -
ARCHIVED Flour Recommendation
sa1937 replied to Christy77's topic in Gluten-Free Recipes & Cooking Tips
Welcome, Christy! Are you talking about Pamela's Baking & Pancake Mix? I use it for several things besides waffles and pancakes. It make outstanding banana bread and other quick breads or muffins. But I wouldn't use it for pizza crust or other yeast bread type recipes. She also has bread mixes but I haven't tried any of them so can't comment. Since... -

I buy them at Dollar Tree..can't get much cheaper than that and I have extra pairs all over the house. -
A digital instant read thermometer is helpful, too. I usually let my bread bake until it at least reaches an internal temp of 208

To me it would be color...but that doesn't necessarily mean that's correct. You wouldn't want black flecks in white sauce for example. -
I've had the same problem with bread caving in at the sides and/or bottom. I think it's the amount of liquid. Here's the recipe I've had a problem with. Open Original Shared Link from Jules Shepard's blog. I've pretty well solved that problem by cutting back the liquid by a couple of tablespoons (in my case ginger ale as I doubt I'd find gluten-free...

I use the recipe on Jules Shepard's blog, which is Open Original Shared Link. There's a video you can watch, too. I do use her gluten-free flour, which I have to order direct, but here's a recipe for Open Original Shared Link, which I think hers is based on. When it's just me, I divide the dough/batter and make two smaller pizza crusts so put one pre-baked...

ARCHIVED Need To Vent About My Symptoms
sa1937 replied to Strawberry-Jam's topic in Coping with Celiac Disease
I'm sorry you feel so crappy, Strawberry, and hope you feel better soon. Are you sure you're completely dairy free? I seem to recall that you ate an entire tin of Betty Crocker icing this weekend, which would make a lot of us sick. Edit: Yes, symptoms can be delayed for 3 to 4 days. -

ARCHIVED Best Way To Store Gluten-Free Cupcakes
sa1937 replied to bottleored's topic in Gluten-Free Recipes & Cooking Tips
Also there are cupcake corers, which take out a bit of the middle to stuff with frosting, although I don't think I'd want to give up part of the cupcake to do that. King Arthur Flour has one Open Original Shared Link. -
