  3. Dang, you guys are making me hungry!!! A couple of other things that were a gluten-free hit here on Christmas Eve: Crustless mini spinach quiches Focaccia topped with olive oil, sea salt and fresh rosemary (I used Jules Shepard's flour and her recipe).

My neighbor across the street just plowed my driveway (NICE!) so after I'm sure it's over, I'll go out and shovel my sidewalks.   6. If she feeds me before I shovel, I'll need a nap! I expect I'll be doing some shoveling of my own tomorrow as they're predicting 3 - 5" of snow and then posssibly freezing rain/ice. Ugh!
  7. I also like Orville Redenbacher's popcorn but have bought the plain popcorn in a jar and made it in a microwave popcorn popper and then add olive oil and salt to taste. Unfortunately the last few times I've fixed it, it did not like me so occasionally I try it again. I've wondered if perhaps it's too much fiber. It used to be my absolute favorite snack...

  17. My daughter told me that she was just amazed at how good the Canyon Bakehouse bread is. Unfortunately I haven't seen find their products around here.
  18. Remember the old Bisquick Impossible Pies that made their own crust? I know the gluten-free Bisquick box says it *may* contain soy although it's not listed in the ingredients. I think you could make this using a gluten-free flour and thereby eliminate the need to buy an expensive crust. I made some mini spinach quiches on Christmas Eve that turned out...

  20. You might always want to use that Google search thingie at the top right of your screen and search for "cheap meals" or "budget meals". I do recall some threads for those in the not-too-distant past.
  21. Edamame are green soybeans. I found them in the frozen food section of my local Wal-Mart.
  22. I would venture a guess that we probably eat a whole lot better than most people consuming the average American diet (the sad American diet).
  23. StarKist Selects tuna is soy-free. It's in the can with the gold label and my local Wal-Mart has it.
  24. My mind is usually blank when it's time to make a meal. I love breakfast for dinner once in awhile, which could be a breakfast casserole or pancakes/waffles. How about pasta and chicken with an Alfredo sauce (don't know if you can do dairy)? Both Classico red and white sauces are gluten-free and they have a bunch of recipes on their website....
