In your own gluten free home, the potatoes would be fine. But given all the other foods being prepared at the same time, even gluten free by ingredient dishes can get ruined. Back in the day if I were making multiple dishes I would have easily used the same utensils. Boiling pasta, dumping out the water and then boiling potatoes in the same pot, seems harmless... -

It's nuts. And you're right, they are personally insulted. That people will keep pushing food, or denying you should be scared of contamination... "surely a little bit won't hurt?" is mind boggling. Would they go up to someone with a pin and poke them and expect that to be ok because it'd only draw a little blood? I will never understand why people... -

I voted "by myself (elimination diet) - tests were negative" . But I wanted to add that my doctor supported me going gluten free as she she said she'd seen a lot of patients see improvement. She encouraged a grain free, dairy free diet but I haven't managed that yet :-) -

I'm gluten intolerant; tested negative for celiac and don't have the genes. Seriously, try going entirely gluten free. I probably wouldn't have but for the encouragement to do so that I got here to do it thoroughly and properly, and omg did it change my life! So many random, bizarre symptoms totally resolved. I look at the menu first, not so much to see what is gluten free, but to see what else they offer. If most things on the menu would be things I couldn't eat, I don't trust the gluten free selection. Too easy to get cross contaminated. Also don't assume that the things listed are the only ingredients. Often they just list the main selling point type ingredients... -

I spent four weeks travelling around the states. Sometimes in hotels, sometimes with friends, travel mostly by train. I always had a food bag with me, it's contents varied. Be careful with things like sugar and baking powder. Back in my gluten-y baking days I used the same measuring cups and spoons for all ingredients because back then I didn't care if flour residue got in the sugar, etc. I ended up giving that stuff away too, rather than risk it. -

I'm sorry I don't have any tips add but I hope you feel a lot better soon. Getting glutened sucks, whether it's by accident or through something like this. But I would encourage you to try and stay strictly gluten free from now on. Whether or not you have officially diagnosed celiac doesn't make much difference unfortunately to how our bodies react to it... -

Are you staying in downtown Chicago? I was there recently and I found it the best place of everywhere on my trip to eat gluten free. I'm not sure from your list of things if you would eat at Chipotle, but there were lots of those in the Loop and I would sometimes pick it up for later.
