ARCHIVED Jury Duty With Gluten Intolerance
sb2178 replied to Chattyaholic's topic in Coping with Celiac Disease
I was interviewed by the judge and attorney individually when selected for the trial that I served on last year. It was before GI issues became really urgent and was diagnosed, so I didn't bring it up. I suspect you could bring it up then. -
ARCHIVED Transglutaminase Iga - Positive
sb2178 replied to clnewberry1's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
So, yes, it is almost definitely celiac disease. there is a very small chance that it could be inflammatory bowel disease, but it's more likely to be celiac disease ESPECIALLY if you've experienced a decrease in symptoms. gliadin testing is a little more variable. You'll probably figure out quickly whether you react to contamination, and many people... -

ARCHIVED Foods & Nutrition Class
sb2178 replied to 2Boys4Me's topic in Gluten-Free Recipes & Cooking Tips
In the US, you could, via an individualized learning plan, require the school to work around that. Working with wheat flour is a known trigger for celiac disease, which it sounds like he has documented in a medical record. I'd start with his counselor, and meet with the foods teacher, to see if there is an alternative. Would the teacher offer alternative... -
ARCHIVED Confused - Long (My Apologies In Advance)
sb2178 replied to Momof2xy&2xx's topic in Parents, Friends and Loved Ones of Celiacs
Yes, and if she responds to the diet (if nothing else shows up clearly positive, I'd try it for a month or two as kids are notoriously hard to diagnose sometimes) or tests positive, be sure the whole family is tested. It's really easy to be contaminated by young children. I babysit sometimes and have to be very obsessive about avoiding exposure. Even... -
ARCHIVED Vitamin D Deficiency
sb2178 replied to dube's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
5000 IU is available OTC. 28 is low, but you're generally not considered officially 'deficient" until you drop to 16. If you live someplace sunny, he may also assume it will rise seasonally once you're back out in the sun. Which it likely will. I'll just caution everyone to not get too carried away. It is a fat-soluble vintamin which means theoretically... -
I second the rice cooker. I have a 6-cup that I use all the time for various grains. You toss them in and can putter off to shower or whatever until it's done. Top it with steamed vegetables and whatever protein you like for a basic meal. I'll make rice for breakfast and finish it off for lunch or dinner; or make it for dinner and finish for breakfast...

ARCHIVED Gluten Making Me Uproot Myself
sb2178 replied to LivesIntheSun's topic in Coping with Celiac Disease
Ugh, awful choice. I would try to see what you can get shipped in before moving. Shipping is wicked expensive, but for packaged ICE snacks, nuts, and maybe even dry mixes, well worth it. The occasional emergency prepared meal in the vacuum packing might be nice too if that's something you like/can get. Might be worth it if your living expenses are lower... -

ARCHIVED Is It Possible 2 Have Fructise Malabsorption And Not Celiacs
sb2178 replied to tomtom009's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Wheat is forbidden on a strict no-fructose diet, so it can mimic celiac disease somewhat. Anything that has a lot of fructans can also lead to problems if you have fructose malabsorption. I think rye is okay in terms of fructans so maybe try 100% rye bread to see how you react to that? -
ARCHIVED How Far Ahead Do You Plan Your Meals?
sb2178 replied to aeraen's topic in Coping with Celiac Disease
It varies-- some weeks I plan nothing but just live off the freezer and dry goods. Other weeks I'll actively plan out three or four meals. My default is to see what looks good at the farmer's market or what's on sale at the grocery store, buy a reasonable amount, and then decide. I'm single, so usually when I cook, I have leftovers for a day or two. ... -
Schar brand stuff in Europe tends to be pretty good (I look for it in the US). One of the major tricks with going gluten free while veg is getting enough protein and iron and not too many refined carbs. It's harder to do if you eat lots of packaged foods, so having a rice cooker and cooking at home is great! So, try to find whole grains (brown rice instead...

ARCHIVED Dr. Oz: Enemy Of Gluten Free Efforts
sb2178 replied to jessicaljensen's topic in Publications & Publicity
(My comments. You can click on the "contact us" at the bottom of the page to e-mail the show directly.) Dr Oz, I was somewhat horrified by your recent coverage of celiac disease/gluten sensitivity/gluten intolerance. While I realize it is a complex and understudied subject, there were blatant errors. First, as any medical professional should know... -
ARCHIVED Weird Skin Pain
sb2178 replied to Marie1976's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I tend to get it before a migraine (migraines aren't formally diagnosed as they're pretty rare and a couple of aleve with a long nap generally gets me through them) and the skin pain is worse than the head pain. I HATE wearing clothes then, because it hurts. -
ARCHIVED Won't Give Endoscopy With Breastfeeding
sb2178 replied to motherwqsalways4's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Well, that's absurd. I know the research that breastfeeding is beneficial to both mother and child and support it, but seriously, consider the mother's health and quality of life. Are you totally opposed to using formula for one or two days? Did anyone offer that as an option? What did your pediatrician say? And why on EARTH did nobody clearly spell out... -
Making sure that I get enough sleep and maintain high levels of nutrients help. I find that I really need a multimineral and additional magnesium. I've tried dropping both, but it seems like weird sleep patterns and more fatigue pop up within a week or two each time. Cutting sugar/refined grains in favor of whole grains (preferably unprocessed) and fruit...

ARCHIVED 100+ Ways To Make Rice
sb2178 replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
I've made brown rice pudding with half soy milk, half coconut milk (from a can, not the weird stuff in a carton). I grew up on Rice Burgers! Haven't made them recently, but they're good and I can dig up a recipe if anyone wants one. -
ARCHIVED Vegetable Side Dishes- Need Ideas
sb2178 replied to Teri Lou's topic in Gluten-Free Recipes & Cooking Tips
I like purees of cooked vegetables for iffy stomachs. For example: steam up some carrots and cauliflower and then puree with some seasoning. I've a recipe posted if you want the link. (PM me for actual recipes/links). You can do the same thing with a mix of root vegetables, too. Winter squash with sweet potato, sage, cheese (optional), and maybe... -
ARCHIVED Got The Results Of My Food Panel Back
sb2178 replied to hnybny91's topic in Food Intolerance & Leaky Gut
A lot of items have environmental allergens with similar proteins, so if you have a ragweed allergy, you might show up for cantalope (I think??) but not actually be allergic to cantalope. Repeated testing tends to show quite varying results. IgG testing isn't very reliable, so definitely do elimination/challenge testing. See how you feel. -
ARCHIVED Searching For Gluten-Free Dried Beans
sb2178 replied to potatopeelingmom's topic in Super Sensitive People
You could try Seed Saver's Exchange eating beans. I don't think they have grains on site, but you'd have to ask.
