Thanks, Lucia. I've been doing a little reading and I'm seeing the same thing you're saying. Besides the injera it looks like I can eat the food. I think I'll bring some Udi's and ask for my food on separate dishes. I don't usually have issues in Indian restaurants, where they cook pretty much gluten-free except for the bread. -

In her case it's very much like diabetic neuropathy, but she is not diabetic. As far as I know, her symptoms are sensory. She gets tingling, pins and needles, numb patches, and sometimes outright pain in her feet. How did you get no actual diagnosis? Deamidated gliadin antibodies are pretty specific for celiac. For starters, it may just take longer than two months. It sounds like you have been sick for a while, which means there is a lot of damage. As Sarah mentioned, a lot of celiacs do better off dairy. If you suspect that you are truly celiac and not gluten intolerant, you cannot do the diet at 90%. You risk other autoimmune health problems and continued malabsorption. You will also probably find that over time as your immune system settles down from not being under constant gluten assault, you will react more strongly to gluten. 90% is not an option... -

Having both anti-TTG and anti-endomysial means you're definitely celiac. Anti-endomysial antibodies are very specific to celiac disease and some doctors say that a biopsy isn't even necessary if you have them. Biopsies can come up false negative. I got some dduk at a local Korean market and it had an odd fishy flavor. The only ingredients were water and rice flour. Has anyone else run across this? I do buy bean thread there and they have an entire aisle of different rices. The veggies there are cheap and good too. I love baby bok choi. -

That wikipedia article helped. Did you look at references 29 and 30? Apparently wine and port can be "fined" with gluten or gluten derivatives and it's sometimes done as an alternative to using animal protein. There are studies showing lower levels of micronutrients in foods. Soils aren't what they used to be after decades of farming chemicals. But... why do some people become bipolar and not others? I never buy from bulk bins. Even without shared scoops, I am concerned about what was in the bin in the past. I've never seen a bulk section that didn't have a lot of wheat, pasta, barley, and other gluten grains. Funny! Got another. Foodiot (food+idiot) Person who has no idea what is in their food. Believes flour grows on flour trees in 5 lb bags. Fadliac (fad+celiac) Person eating gluten-free because it's trendy and cool. Fadliacs don't actually have any gluten-related health problems and can't figure out why you're so careful. -

Funny, I was just talking to a friend about this. I personally prefer to buy from a supplier like Bob's Red Mill who actively tests for gluten in all their products. I know it costs a lot more but I think it's worth it to keep gluten out of my diet as carefully as possible. Asian food is particularly scary to me after all the issues in the food supply... -

Hi there. You'll do fine on the diet. You can't worry about things like how you might react to gluten down the road. You said your blood test was very high positive, so you really need to stay gluten free. Some people with silent celiac never develop trouble from eating gluten. With luck, you'll be one of those folks. -

Hello there. Blood markers in celiac disease are notorious for being falsely negative. The single largest risk factor for celiac is a first-degree relative with it. It only takes one of the genetic markers to increase your risk for celiac, and you say you responded well to the gluten-free diet. I don't think the second EGD two weeks after going gluten... -
My easy meal is frozen chicken breasts tossed into a frying pan with olive oil and seasoned with sea salt and Herbes de Provence. They take a while to cook, since I cover them and cook slowly until they're thawed, but it's super-easy.
