  1. You should continue to eat gluten and go for a proper celiac blood panel from your doctor. Enterolab results are not validated well enough to make any conclusions about celiac disease from them.
  2. You might try bringing this article on new celiac diagnoses in the elderly to your doctor. Open Original Shared Link
  3. Second post in this thread has my professional opinion of Enterolab. As for genetic testing, there are occasionally biopsy-positive celiacs without DQ2 or DQ8 but it's uncommon. Positive genetic results don't mean much, as 30% of the population is DQ2 or DQ8, yet only an estimated 1-2% are celiac.
  4. Some people with celiac disease are cross-sensitive to casein, the protein from milk. That's one thing to look at. If you're fond of potato chips, Lay's Stax are made on a dedicated line so they're always gluten-free. Manufactured foods in general are always riskier than cooking for yourself. You'll get a feel over time for how gluten-sensitive you...
  5. Please find a good allergist and get there as soon as you possibly can! Anaphylacic type allergens can be identified really easily with skin tests, and you don't want to try to diagnose a life-threatening allergy without help. You can't assume this is wheat. Your body may have changed since you went gluten-free and you'll need a full allergy panel to...
  6. I'm always trying not to make people paranoid, but there have been a few recent FDA recalls of frozen beef and turkey patties for undeclared wheat. It seems that sometimes manufacturers will deceptively add grain fillers to ground meats. If you're buying ground meats at a butcher section it should be fine. Whole meats are perfectly fine. The one thing...
  7. Yes, it's possible. Gluten and casein have been both linked to behavioral problems. There IS a treatment for ODD and other bipolar spectrum disorders that is suitable for kids. It's a nutritional supplement called EMPowerPlus. It's expensive but tremendously helpful and can eliminate the need for meds and psychiatric care (which costs just as much)...
  8. You're doing great! It usually takes a few months for Ab levels to drop so seeing results after five weeks is good news.
  9. There's a gluten-free stout??? Wohoo!!!! Where do I get it? I didn't think much of Redbridge. It's too heavily hopped for my taste.
  10. Salad! I eat salads in Greek restaurants all the time and I've never had a problem. You can usually get a great salad with tomatoes, cucumber, olives, and feta cheese. I usually go without dressing because the cheese and olives give enough flavor. You can ask for plain oil and vinegar at most restaurants if you prefer. I tell my waiter that I am "allergic...
  11. To answer your question, two days is not enough. You might start to notice differences after two weeks, but some people take as long as two months.
  12. I get good bread with the Bob's mixes. The "Wonderful Bread Mix" works well and even though it has the bean flour, it doesn't taste weird to me the way the baking mixes do. I get the best results if I measure liquids very carefully. The dough is wetter than regular bread, so I also have to mix everything in a bowl before I add it to my bread machine...
  13. Hard cider is an alcoholic drink made from apples. Ciders tend to run 4%-8% alcohol range, so they're comparable to beer. It's easiest to find bottled, but if you're lucky a pub will have one on tap. English and Irish pubs seem to have ciders most often because they're very popular in the British Isles. Trader Joe's carries bottled cider, as do many specialty...
  14. I hope you don't get too sick. It's so frustrating when you ask all the right questions, and something still goes wrong. I'm glad to hear the owner was apologetic and has some understanding of what she has done to you.
  15. Bummer. Sorry to hear you got sick! I can see where sink water from heavily glutened dishes would be a problem. Most folks get caking off dishes before they go in the dishwasher and you have clean water spraying on dishes so CC is not going to be the same kind of issue as with a sink.
  16. It's just like what VioletBlue is saying with Kava. Valerian has a long history of safe use with occasional, low doses. My understanding with Kava is that some non-traditional drugstore preparations were causing problems, particularly if parts of the plant other than the root were included. Also, people tend to think that is some is good, more is better...
  17. A lot of white wines have sulfites that you can react to. Red wines also have a fair amount of histamine that can leave you feeling funny. Gin has none of that. My own favorite drink is a good, dry hard apple cider. As far as bread, Udi's is my favorite, with Glutino or the Whole Foods brand second. I haven't seen a Trader Joe's brand but they don...
  18. I'd leave the cruciferous veggies off the first two weeks. Some people find them hard to digest. The other thing I'd think about is avocado. People can be allergic to it. Seafood is a big question mark to me. Fish and shellfish are VERY common allergens and I'm surprised your doctor is supporting an elimination diet that contains either. If I had...
  19. You might not handle the sugars in legumes well. Have you tried Beanzyme? It's a gluten-free version of Beano.
  20. No, inosital is sugar. It used to be considered a B vitamin but that was before it was discovered that the body can make it. It is not generally included in B vitamin supplements. There are a number of old psychiatric studies using 12-18g a day of inositol supplementation that showed significant effects on anxiety, panic disorder, OCD, and depression. ...
  21. Good advice. Ask your doctor for a celiac panel while you're there.
  22. Your doctor was actually very clear when he said "borderline celiac". Celiac disease is a process. You start with a genetic gluten sensitivity, and over time your body develops autoimmunity from the gluten sensitivity. The autoimmunity damages your gut and you get lots of chronic health problems from malabsorption and autoimmune damage. Your test results...
  23. Are you trying to make people crazy? I get a little frustrated on this board because of posts like this. You're not going to CC your dishware in the dishwasher. We're not talking about something where a single molecule will kill you.
  24. Go easy on Valerian and Kava. Both are hard on the liver. It is unwise to use Valerian daily. Passion flower (P. incarnata) leaf and root extract is another anxiolytic but I don't know much about safety. The fish oil and inositol I mentioned are considerably safer than herbals.
  25. I just found this recipe. I'm going to try it this weekend. Open Original Shared Link You can do it with Chex instead of cornflakes too. It's supposed to be good with Chocolate Chex.
