  1. You may have fructose malabsorption. Grapes, watermelon, and some vegetables are high in fructose. See if you can tolerate low fructose vegetables like zucchini, spinach, chard, and butternut squash.   4. How were you diagnosed? Also, how have you determined that the wheatgrass you are eating is gluten-free? Is it independently certfied as gluten-free? There could easily be enough gluten contamination in wheatgrass to keep you from recovering. Also, diets that severely limited often lead to deficiencies that can keep you from feeling well.

  8. Whoa! I told my Dr. I was certain I was malabsorbing thyroxine. I don't get all the effects of thyroid without T3, which is easier to absorb. That explains a LOT.
  9. I use the Bob's Red Mill wonderful bread mix. It comes out fine for sandwiches, though it's a little more crumbly than I would prefer. With gluten-free bread, you know to only do a single rise, right? A second rise will weaken the gums and give you a much denser loaf.

  19. Gluten-free diets that rely heavily on processed gluten-free breads are the big problem. Most white flour in the US is enriched with B-vitamins and iron and wheat flour has some fiber and protein.   21. I don't see gluten ingredients, but I'd go with the Nature Valley Nut Crunch bars that are clearly labeled gluten-free on the package. Larabars and Kind Bars are also good gluten-free choices.
  22. Oxidized fatty acids aren't terribly healthy to eat (which is why you perceive them as rancid) but usually the flour will have an "off" taste/smell when it starts to spoil.
