As you have discovered the hard way gluten sensitivity can be just as serious as celiac. Many of us do become more sensitive after going gluten free. Also if you keep cheating you are more likely to develop other food intolerances. Just putting something in your mouth is enough to gluten you. You don't have to swallow it. Without asking you can't know if the chicken had some flour mixed in with the sauce or soy sauce with wheat in the tequila marinade. I personally would not risk it since the stone is porous and absorbs things with use. Get yourself a new one and gift that one to a friend or family member that doesn't have to eat gluten-free. -

You said you are lactose free but are you still consuming other dairy products? Casein could be the problem not just lactose. I would eliminate all dairy if you have not. I've never spilled Xanthan Gum but Goo Gone takes off stickers and gummy messes so it might just dissolve the mess and be easy to wipe away. There are no blood tests for gluten sensitivity. There are only tests for celiac disease and those tests have a high rate of false negatives.
