I buy the store brand. Here's my mom's tuna salad recipe. It's yummy. 1 can tuna, drained 4-5 hard boiled eggs, chopped 2 tsp. minced white onion 1/3 - 1/2 cup chopped celery (from the heart, not tough outer stalks) mayo - homemade or safe purchased - about 1/2 cup, give or take s&p to taste a dash of mustard powder You can add shredded...

I wonder if you could sub peanut butter for the margarine and end up with Elvis Cookies?

I tried it when I discovered I couldn't do dairy anymore. The only milks I cam tolerate is original Rice Dream and Coconut Milk without a ton of additives. But there are recipes for making your own almond milk on line if you can find a good source of almonds. I actually made my own coconut milk once. That was a major PIA.

ARCHIVED Looking To Meet People Who Have Been Bed Ridden From Celiac
Marilyn R replied to MissBonnie's topic in Introduce Yourself / Share Stuff
Are you getting gluten kisses from that hunk of a guy in your profile? (You two make a great couple!) I bought some gluten-free hand lotion that cost over $20 and decided that olive oil is just as good on the skin and lips. You have to try to live like your ancestors. For cleaning products, I mainly use borax and lemon oil. And microfiber... -
ARCHIVED Deactivate My Account Immediately

Holy cow. A twist. I really thought Ravenwood would get Carl sorted out, and at least one, maybe two of the sons gluten-free. But he bolted. We are our own soap opera. -

Great post, shauna! I really admire your writing, and you did not blather. -
Yep. You have to give up. Your mother wants you to be her daughter and is going to refuse any advice you give her. Even if you call her doctor's office and ask them to suggest a celiac panel on her next visit she'll ask if her daughter called them. I have a two times and out rule. Mention or encourage twice. It frustrates me, but they're living...

ARCHIVED I Can't Take It Anymore
Marilyn R replied to shadowicewolf's topic in Coping with Celiac Disease
I hope you have a better night tonight and a good day tomorrow. For the constipation, heat 2-4 oz. of prune juice in the microwave for 30-60 seconds. Drink it warm. Follow that with a tsp of honey. Soak in a hot bath with a couple of drops of peppermint oil, 2 cups epson salts and 1 cup of baking soda. Take a walk. It doesn't have to be a long... -

ARCHIVED Coping With A Gluten Eating Family

Especially with money being so tight, I think your sister is showing an amazing amount of disrespect for you and your food. I'm impressed that you didn't clobber her when she and her boyfriend ate your gluten-free cookies. Yay for you! (And boo to her selfish behavior.) It seems like you are non-confrontational, which is a great quality, but... -
The What's For Dinner Tonight Chat
Marilyn R replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
OOH. I haven't had single malt in years. Over a decade. Tonight we ate like peasants, and it was really good. I made potato pancakes and homade chicken soup. We had salad later, and I made a bomb dressing with chopped fresh herbs, leftover hummus, left-over balsalmic vinagrette, grated cucumber and coarse mustard. I stuck my immersion blender... -
ARCHIVED What Am I Doing Wrong?
Marilyn R replied to Fire Fairy's topic in Coping with Celiac Disease
I had a problem with the almond milk on my elimination diet...but that could just be me. I think it was that Carageean. I may have misspelled that. Cooking isn't that bad. It can actually be fun, relaxing and rewarding. That sounds like a commercial but it's true. I hate doing laundry, but nobody does it for me. Some of the things I cook... -
ARCHIVED Struggling With Recovery :(
Marilyn R replied to MissBonnie's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I'm sorry you're feeling so bad, especially when you should be feeling so much better. What are you eating? Many of us develop other food intolerances, especially to dairy, soy, corn. The protein is similar in structure to gluten and your autoimmune system keeps attacking. I have to avoid quinoa too. It may help to see an allergist too. Good... -

Doctors really like diagnosis with clear scientific evidence. That's in their comfort zone, and how they were trained. -

ARCHIVED How Often Do You Cheat?
Marilyn R replied to steve-010's topic in Coping with Celiac Disease
My mother was an R.N. and diagnosed with celiac disease but refused to follow the diet. She lived to 87, but was completely helpless and wheelchair bound. It took two aides and a machine to get her out of a chair, her bed, on or off the toilet. When she was in her 50's and 60's, I could hear it in her voice when she was sick and about to have to go to... -

I'm so happy you had a great trip! Yay@ Sounds wonderful, thanks for the post. -
My brother is a diesel mechanic and has worked at a manufacturing plant for 30 years. One time when I told him that I couldn't believe how many doctors I went to trying to figure out what was wrong with me, he said "Doctors give you 15 minutes. Sometimes it takes me more than 15 minutes to figure out what's wrong with a machine." He's always been a thinker...

ARCHIVED Meatloaf Recipes? Anyone?
Marilyn R replied to momtok&m's topic in Gluten-Free Recipes & Cooking Tips
This isn't really a meat loaf recipe, but I purchased ground pork today and mixed it with fennel and onion & s&p. We grilled it shaped into burgers and it was great. So for a meat loaf recipe, I'd do 1 lb. burger with 1/2 lb. gound pork, l cup chopped onion, and 1/2 cup grain mix of your choice. I've used coursely ground rice Checks or ... -
ARCHIVED Freezable Recipes

Your baby is so cute! It really does get easier. You may find that grocery shopping is exhasting, even overwhelming at first. But it gets better. I probably spend less time in a grocery now because there are entire aisles I avoid. You can freeze gluten-free pancakes too, btw. And flatbread. Wishing you good health, m -
ARCHIVED Irritated With My Family!
Marilyn R replied to RachelisFacebook's topic in Coping with Celiac Disease
I think you should remind hub what Lorraine Bobbit did to her hub. Cheating is cheating, and we can be down right mean when it comes to our food. I've never seen sorghum chips, I guess you're getting them down under. -
ARCHIVED What Would You Like To See In A Cookbook?
Marilyn R replied to MissBonnie's topic in Gluten-Free Recipes & Cooking Tips
No, a PC is great for anything that usually takes a long time to cook. I've cooked ribs, thick pork chops, roasts, artichokes, beans, chicken, lamb, curries, beef shanks, etc. in the PC. It saves so much money because you can buy inexpensive cuts of meat, buy bags of beans vs. cans for about 1/3 of the price. It saves on power and you add less to the landfill... -
ARCHIVED Small Nerve Fiber Neuropathy
Marilyn R replied to IrishHeart's topic in Related Issues & Disorders
Dear Irish, I don't know if I have the same diagnosis as you do, I'll ask my neurologist on my next visit. I was told my dx is polyneuropathy. I never got diagnosed with celiac disease but had issues with neuropathy for two years before going gluten-free. 11 months later, my pain is at a "1" or "2" whereas it used to be at an 8, sometimes 9 or...
