  1. Coat the blueberries or chocolate chips with a little of the flour mix in a separate bowl before adding them to the muffin mixture and also fold them in gently don't mix hard.
  2. I've been making my own salad dressings and this one is so simple I had to share. Honey Mustard Dressing In a small glass bowl a squeeze of honey (approx 2 tsp?) a squeeze of dijon mustard (approx 2 tsp) a glug of olive oil (approx 2 tbsp) Mix with a small wire whisk a few seconds until it thickens... Enjoy!! Sorry for the squeeze and...
  3. I didn't go to Five Guys (didn't care for it much when I could eat gluten) but I went out for lunch today and brought my own bun and noone even blinked an eye..
  4. I used to have that problem but I take 3 mg of melatonin (in a gluten free tablet) now and I fall asleep faster and stay asleep all night. Over the counter in the vitamin aisle. If you decide to try it,just make sure it's gluten free (will say on the bottle). Just one an hour before bedtime should do the trick. A special center in the brain called...
  5. I'm not over 60 but I'm over 50!!!
  6. I have an ad blocker application so I don't see any of them... LOL
  7. A1C is a blood test that measures your average blood sugar levels over the past 3 months. It is a great test that is actually more important that a fasting blood sugar. You want the number to be less than 7.0 if you are diabetic and a non diabetic can be as low as 5.0 maybe lower. I have been Diabetic for years and my last one was 6.4 and that was...
  8. Tonight I made: Lightly breaded chicken breasts (with homemade gluten-free bread crumbs of course), baked potato, fresh steamed asparagus with a light lemon sauce over the chicken and asparagus... YUM!!!!!!!!!!!!!!!!
  9. I have been gluten free for 7 months now and I don't have any issues with soy, dairy or eggs so everyone doesn't get that. My breakfast of choice lately is Chobani yogurt with a handful of cashews in it (the only nuts I can eat besides peanuts). I have been Diabetic for 9 years and probably before that but I was sick of doctors so I didn't go. I was...
  10. Agreed!!! From what I've read in my research, my opinion is the same as yours
  11. Observation from me... life has gotten considerably better over the past 7 months. I feel better than I have all my life, who knew feeling sick and tired all the time wasn't normal. It was my normal for 53 yrs. Now I have energy, I'm doing better at work, found my sense of humor again As for bread, I will use Udi's white (allergic to flax so can...
  12. I didn't go gluten free until after the diagnosis in 2010, my initial tests still showed negative (not sure which ones) but my biopsies and genetic tests showed Celiac. So I went gluten free that day. In the past when they did the tests that came back negative I had been sick for a month or more and hadn't eaten much but cottage cheese and jello for...
  13. I also have allergies to seafood, fish and nuts along with seasonal allergies (that seem to last all year!!) and while I haven't noticed an improvement in the seasonal allergies yet (it's Spring so how can I expect that?) I'm afraid to try the others for fear of the 'reaction' that ended me in a rescue squad. I think I'm going to have to get braver before...
  14. Raising hand... negative for years, positive in 2010

    ARCHIVED Grr...

ok are we all related to the same people? LOL My family, close and extended have pretty much stopped talking to me since I was diagnosed. I did the 'right' thing and made the phone calls and told them all about the Celiac diagnosis and they all said OMG and that's the last I've heard from any of them... oh well I can't fight their battles for them....
  16. Same with me, no patience for that at all. My doctor's nurse asked me if I ever cheat and I said 'Absolutely not!!, the pain I experienced for the last three years and the nausea I had for my entire life is not worth it whatsoever' She just looked at me and smiled.
  17. Oh yeah I know what you mean about the glazed over look.. lol I've run across several people that are 'fake gluten free' Why would anyone do this if they didn't have to? That's all I wonder. I've learned to make chocolate cupcakes and other goodies and I bring them to get togethers and no one knows the difference until I pick one up and take a...
  18. I'm going to have to look for this brand. I've gotten used to Tinkyada with flavorful sauce on it to hide the nasty 'bran' taste (ok it might be just nasty to me lol) and the corn pasta's I've tried tasted too much like corn. So Sam Mill's huh? I'll be on the look out. If I'm not mistaken I think I may have seen this at my local store... Thanks...
  19. Oh people thanks for making me not feel so bad... I am the COOKIE MONSTER LOL If I make cookies, I eat them until they are gone and then I don't make them again for months because I am the COOKIE MONSTER I'm surprised I'm not blue!!! I made some awesome gluten-free Oatmeal chocolate chip cookies this weekend and binged for two days... ahhhhh Why...
  20. I go through this too. Not as often as I did at first but still enough that I think to myself "What are you doing?" For instance, over the weekend I made Oatmeal Chocolate Chips cookies. This was the first time they turned out perfect and I think my brain went into overdrive. I couldn't stop eating them yesterday... My non gluten free son liked them...
  21. I have to take my sublingual B12 everyday. If I miss a day, I get the sores on the corners of my mouth INSTANTLY. I've just resolved to take one every day from now on... and yes I'm over 40!!
  22. Agreed I just bought the K-Toos and they are the best I've had to date!!!
  23. Never cheat, too much damage to overcome and too much sickness in my memory... I feel bad for you having to read all this but it's the truth. If you have children with someone that cheats death.. remember that Celiac Disease can be hereditary and they could suffer too and if she's not strict with herself on gluten she could injure them with her casual way...
