I had some brown rice tortilla's (not TJ's) and they were gross... ate a few for wraps for lunches and they fell apart right in front of my eyes... Threw the rest away. The texture and taste of them was like partially cooked pasta and not al dente!! Maybe I'm still getting used to this different texture thing I don't know but I'd rather not eat if that...

I received my gluten free cookbooks yesterday and went shopping for ingredients to make my own gluten free flour mix and today I made chocolate chip cookies. To say the least they are AWESOME!!! I'm flying in Feb to see my oldest son for his birthday so this is a good post for me to read. It's my first time flying since the 'diagnosis'... I've got to remember the empty water bottle so I can fill it up after security and not pay $3 for a bottle of water in the airports. It's a long trip 13 hours with layovers so I better plan ahead with snacks...

I have found that mexican is the ONLY cuisine that I can eat (passing on the flour tortilla's of course) that I don't have to worry about. We have a local place here that were very good about answering all my questions (I speak Spanish so it was a bit easier lol) but they only use corn tortillas unless the dish specifically says flour tortillas. I eat...

Cafe Naturally has a dedicated gluten free kitchen. They are open from 8:00am-3:00pm only so if we get together it would have to be on a Saturday for me because I work during the week. If you all want to get together let me know. I'm thinking the St Mary's gig might be a 'whine bag' show or so I've heard. I'll go once and see this week.. (Thursday...

There is a Celiac Group that meets at St. Mary's in Green Bay. The next meeting is Dec 9th, (this coming Thursday). They meet on the even numbered months. I'm going and this will be my first meeting. They are having a potluck at 7pm so I asked if I could come a little later as I don't really want to eat at the potluck with all my food allergies and the...

I've been getting this too at work. I got so tired of it this week with the comments ALL THE TIME 'you're shriveling up to nothing', 'oh you've lost so much weight how did you do it' etc... that I finally said to these women. "I've been sick for 2 years and it finally got bad enough that I couldn't keep anything in and then they diagnosed me with Celiac...

Not cooking today, going out for Chinese. The place we go to have gotten to know us over the years and when I told him about Celiac he started making my dishes positively gluten free. No more eggrolls but I can still eat the rest!!! Yay! Support your local businesses they are more likely to take you seriously and provide gluten free options!... -
ARCHIVED Here's What My Dr. Says About Celiac Panel Tests
Judy3 replied to orangez28cam's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I had endoscope and colonoscopy done on the same day the end of October. There is absolutely no reason for not doing both as long as you're there and 'under'. I would suggest you get a second opinion in a different clinic or organization. Sounds like what the last person said. Two dates of admission equal full pay on both procedures. I work in the... -
ARCHIVED Waiting For Biopsy Results- Dr. Says It's Probably Ibs
Judy3 replied to jessicalw28's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Artificial sweetners especially Aspartame is evil. I was diagnosed with IBS and Fibromyalgia years ago and suffered for a long time. I stopped consuming Aspartame (Equal) and my Fibromyalgia symptoms went away... leaving the door open for them to figure out once and for all that I have Celiac. Dump the diet soda and drink water or iced tea. The only... -
ARCHIVED People Not Taking You Seriously
Judy3 replied to LePandaRouge's topic in Parents, Friends and Loved Ones of Celiacs
OMG reading these posts made me laugh and cringe at the same time. I'm new to this so 'that gluten thing again' seems to be a topic of conversation with just about everyone I eat with. Last week eating dinner with a friend: "All your having is a salad?", my response "Yes, I like salad". But they have so many good things here at this 'SANDWICH' restaurant... -
I can relate to the 'oh I'm late I'll just get something at the office'... I am trying not to do that anymore and I only go into the office three days a week (work at home Mon and Fri) so it shouldn't be that big of an issue should it? Ha! I need to start preparing meals ahead of time so I can grab and go from my fridge or freezer like was suggested. ...

I sauteed onions and mushrooms in olive oil, added some diced turkey breast and some turkey stock(leftovers from TG)thickened the juice with corn starch and then added some fresh spinach at the end. Served over brown rice spaghetti with a dash of grated parmesan cheese. Yum!! The pasta was good too not too mushy like I've heard it can be.(my first try... -
ARCHIVED My Family Just Doesn't Get It
Judy3 replied to jasonD2's topic in Coping with Celiac Disease
I understand the thoughts in this thread completely. I've had food allergies for years and recently diagnosed with Celiac. A cousin of mine always made comments at get togethers that "You're such a picky eater, God". Now I called her and said you thought I was a picky eater before it's going to be worse now. But when she looked up Celiac adult symptoms... -

ARCHIVED Friends' Reactions To Gluten Free Food
Judy3 replied to mushroom's topic in Coping with Celiac Disease
As you know I am new the the forums and to gluten free food but I have to share. It's not even a month since my diagnosis and I have already had by new 'guy friend' and his sister who has been my friend for years bailed on me. Nice people huh? They were teasing me and joking around about not inviting me places because of 'that gluten thing again'.... -

Judy3 replied to srfjeld's topic in Gluten-Free Foods, Products, Shopping & Medications

ARCHIVED Who Survived Thanksgiving?
Judy3 replied to sandsurfgirl's topic in Coping with Celiac Disease
This was my first holiday gluten free and it was pretty successful for me too. A few minor mishaps. My son and I cooked at our house and took it to my Mother's because she can't do the stairs here. I made regular stuffing and rolls for my family and skipped them myself (learned I have to wear gloves next time I knead their bread dough though as all my... -
ARCHIVED Diagnosed Yesterday...anxious And Need Advice Plz!
Judy3 replied to Kimbalou's topic in Coping with Celiac Disease
Welcome Kimbalou, I am also a fellow newbie just 2 weeks into this. I've found a lot of help here just reading and making lists. I switched to all natural/organic foods a few years ago thinking it was the chemicals making me sick so for me it's just bread, pasta, and cereal to change. And of course, in my circle of friends I am the baker, treat maker... -
