  1. I'M OK!!! I've been diagnosed and gluten free for 2 1/2 months and I feel better than I ever have in my life. I also have diabetes and no longer need to take medicine for that since going gluten free... There are a lot of positives to being gluten free. I know it seems frightening, I was at first too but all the things that have gotten better are...
  2. TOTALLY AGREED!!!
  3. Boar's Head is listed on my gluten free list. I buy Hormel Natural deli meats which say gluten free on the package. I was buying that before going gluten free because I can't get Boar's head here in WI. So far in my 2 1/2 month journey gluten free I've found that Tinkyada brown rice pasta is the best (of what's available to me) It tastes good and it...
  4. I tried to make my own bread the other day and it tastes great with the flour mixture I made up but it didn't rise... I'll try again some day..
  5. Don't feel alone with craving bread.. I am too. (2 1/2 months gluten free) I've tried every gluten free bread in the store (we don't have Rudi's yet) and I can't stand the texture of most or the smell... I tried to make my own bread but it didn't rise. I'm about to give up on bread too. I bought some Glutino bagels yesterday and they smell awful in...
  6. Red Lobster, Olive Garden, and several others that I can't remember are all owned by the same corporate company and that company has gluten free menu's. Longhorn Steakhouse may be one other. I had a get together at the Olive Garden the other night and I was happy with the gluten free menu...
  7. Thank you for your smiles and kind words!!!
  8. I thought the same thing that I was imagining things in the very beginning. After about 2 weeks I had huge bursts of energy and things just seemed better in the world. I didn't have stomach pain or diarrhea, I wasn't vomiting anymore... I felt normal.. (will I ever be normal really? haha) and now 2 1/2 months into this the diabetes takes a vacation,...
  9. Thanks everyone. They told me this 'might' happen but I never imagined it would be this soon. I have so much energy now and I actually want to exercise but I couldn't because I'd almost pass out from low blood sugar and today the doctor said 'gone, no more' and keep riding that bike!!! I love it! Natural wellness is so much better than medicine...
  10. I was diagnosed in November 2010, been on the gluten free diet since November 8 2010 and today they took away my diabetes drugs because my blood sugar has been too low!!! I've been trying to exercise since I have all this energy back and I keep dropping to dangerous lows blood sugar wise. My regular doctor cut it down some 2 weeks ago and nothing changed...
  11. I'm so glad this was posted. I'm about 2 1/2 months gluten free, had my diabetes meds cut because my blood sugar was going too low (good thing) and now it seems the more I exercise (finally have the energy to do that) I'm starving all the time. I live in WI so shoveled a mountain of snow tonight and then had a nice dinner of chicken with red pepper sauce...
  12. Overdiagnosed.. LOL I just read an article at Mayo Clinic where the doctors there feel that it is underdiagnosed and that in reality 1 in 100 people in the US have undiagnosed Celiac. The trends show that it is becoming an epidemic in the US and they are looking for the answers to why? Is it that they ignored it before (as we see many doctors still...
  13. From what I have studied about the genetics of the HLA DQ* genes which I have DQ2 and have been diagnosed as Celiac is that you get it from both parents. The genetic codes must match from each side to produce the genes. (I'm not a doctor just stating what I have researched on my own).
  14. You don't have to be a terrible cook A few simple tips for you. 1. Soup - start with some chopped onion and fresh garlic chopped and cook in a little olive oil to get it started. The the sky's the limit, you can add, cooked meat, vegetables, broth, crushed tomatoes. 2. You can still have quick meals. Hummus is still gluten free but...
  15. On Facebook, their page has a store locator on it!!!
  16. I get the same thing. That's partly how this started, I've had cramps for two years despite a hysterectomy, and many tests they still were there. Turns out the 'cramps' are bladder and rectal spasms and they are better now that I'm gluten free. I still get them from time to time but I'm still healing so it's expected that it wouldn't be 100%
  17. Here goes - my 2010 New grandson in May Sick for whole year Now gluten is evil Finally an answer Have come a long way 2011 will be good
  18. My original blood tests were negative so they did the genetic tests on me. My doctor (a GI) said he goes by symptoms and response to the gluten free diet and then when my genetic tests came back positive for DQ2 he said no question it's Celiac. He didn't do a biopsy as he did the endoscope and colonscopy prior to suspecting Celiac but he told me that nothing...
  19. I have been gluten free for almost 2 months and I can no longer eat raisins either and I don't know why. I used to eat them all the time too.. Now the pain in my stomach from them is so severe that it's just not worth it. I don't have a clue why either and mine are Sunmaid.
  20. Sounds like a great salad... I had one like that for lunch... so I had the crap for dinner... LOL
  21. I decided to let my 'god I want pancakes' voice win tonight. I made gluten free pancakes for supper and they were the BEST pancakes I ever had. OMG. I bought a cook book and I scored on the first one I bought. There is a flour mix recipe in there that is wonderful. Made the pancakes tonight, frosted sugar cookies for Christmas (my mom couldn't tell...
  22. LOL this made me giggle... it was funny and I can relate. I haven't eaten gluten 'intentionally' for almost 2 months and only one incident in a restaurant so far. But I hear the evil one all the time say 'come to the dark side and have an oreo' lol I kick his butt and make his sleep in the dirty dishes in the sink and then he leaves me alone for a few...
  23. Some times people just simply amaze me... LOL
