I had a date tonight, first meeting of a very nice man... We went to Perkins where I had previewed the menu and found something that looked to be gluten free. Swiss and mushroom chicken on a bed of herbed rice with two sides.. I picked two veggies. Ok we're in business right? WRONG. My dinner came out with a big ol roll on top of my asparagus...

Tonight for dinner I went gluten free AND Vegetarian. I sauteed some onions and fresh garlic in olive oil, added some sliced mushrooms, then a veggie mix I found in the freezer case (Broccoli, green beans sliced thin, carrot sticks, kidney beans, black beans and navy beans all in one) added about a cup or so of that and then some fresh spinach at the end... -

Green Beans- TGI Friday's has the appetizer green beans where they are coated and fried.. yum well those aren't gluten free so I made my own. I agree! It's only been a little over a month for me on the gluten-free diet but I feel 100% better and even can start cutting down on some of my meds. Attitude is everything I think. I've had so many people say to me "What can you eat?" LOL It's like a gluten free diet turns us into refuges and we have to scrounge for food. I told my family about it and 50% freaked. You know I just made a comment about the grieving process this week. I feel like I'm in the anger phase this week, everything is ticking me off, can't sleep, trying to wake up from this nightmare and live normally again. Hmmm not gonna happen is it? Thank you Richard for a man's opinion. I agree. I was in a situation like this and couldn't even go to the bathroom without him standing outside the door talking to me. Same for me, regular doc sent me to Rheumy, pressure points and blood tests for B vitamin deficiency (he was suspect at the time). Mine is gone or in remission if that's possible since I stopped consuming aspartame (Equal artificial sweetner) it's in many things diet soda, some diet juices, even regular gum!!! So if you are a diet soda drinker try that...

Yes sir that's exactly what they did, cracked and broke apart into crumbs. I'm trying to get used to this new textures of things and I'm not having much success. Do you ever get used to it? One thing I determined with the cookies is that their recipe calls for more of their flour mix than my regular 'gluten' cookie recipe calls for and they were a bit floury. Next time I'm going to cut the flour mix by 1/2 cup and see if that helps. They were awesome but not like my 'pre-gluten cookies' and maybe that's not possible to copy them but I'm going...

I must be one of the lucky ones with my gastroenterologist. He diagnosed me in November (this year) with Celiac and I have to see him in February for a check up after being on the gluten free diet for 3 months, then he will be doing an endoscope/colonoscopy at one year for followup. I see my regular doctor in May also and the two of them actually talk...

mmmmm I can see it now, Judy get's a hamburger patty and puts it in her carryon and a week later goes to fly home (having forgotten that it was in there) and is denied access to said jet because of the odor coming from her carry on... LOL
