ARCHIVED Thanksgiving Just Got A Whole Lot Better!
skbird replied to Rachel--24's topic in Coping with Celiac Disease
I used a nut crust and made a pumpkin pie and a pecan pie, too. The pecan tasted better than the pumpkin (I used too much stevia in the pumpkin part) but they were both nice. I made rice stuffing and a green bean casserole. I thought there would be a fight about no stuffing in the turkey or rice stuffing in it, but my parents made it a new way, they cooked... -
I interpreted "having Celiac" as also including autoimmune gluten intolerance. I am non-Celiac gluten intolerant. But for this survey it seems that is close enough. I just found out I have mild scoliosis earlier this year. Stephanie

ARCHIVED Wheat Fiber That Is Gluten Free?
skbird replied to elonwy's topic in Gluten-Free Foods, Products, Shopping & Medications
Sorry, I didn't answer the texture question. I don't notice anything with the sweet rice flour, and I try to avoid corn products so that's the whole story, really. And I use sweet rice flour to dust my pizza dough when I'm rolling it out and it tastes great on it, too, it reminds me of having a light dusting of white wheat flour on baked goods. Stephanie -
ARCHIVED Wheat Fiber That Is Gluten Free?
skbird replied to elonwy's topic in Gluten-Free Foods, Products, Shopping & Medications
Hey RiceGuy - sweet rice flour is basically starch. Good for some baking purposes. When I make cheese sauce, I sort of wing it, but this is my strategy: cube or grate some cheese (usually cheddar, but sometimes I'll use parmasean or this lovely cheese I get at the store - San Juaquin Gold - LOVE IT!) milk sweet rice flour (no, it's not sweet) garlic... -

ARCHIVED Blood Sugar Question....
skbird replied to taweavmo3's topic in Parents, Friends and Loved Ones of Celiacs
Hey, I just saw this. Yes, I have done that, ouch! I was going through an unstable phase and ended up testing a lot - I started out doing every 15 mins one day to see what really happens. That's why I was so surprised when I went high both times now (after the endoscopy when I had the IV with sugar water and then when I had a shot of sake) because I have... -
ARCHIVED gluten-free Dog Treats?
skbird replied to hsd1203's topic in Gluten-Free Foods, Products, Shopping & Medications
I have been buying the dehydrated chicken breasts from Costco. Perfect strip treat and you can break it up if you want. In fact, my cat loves them too so I cut a couple of them up for him and put them in his treat jar. He and the dogs almost get into a frenzy for the chicken treats, but nothing else is listed on the label so i guess there's no special addictive... -
ARCHIVED Wheat Fiber That Is Gluten Free?
skbird replied to elonwy's topic in Gluten-Free Foods, Products, Shopping & Medications
There's always a huge lack of gravy in my house, too, and I go nuts adding broth, etc to extend it. We usually have about 12 people and they ALL love gravy. Anyway, I haven't used the slurry method recently but think I'll try it this week. Last year I made the gravy but forgot the rice flour so my husband ran to get it and accidentally grabbed the tapioca... -
This is interesting, I just went through this with my mom. She was trying to make it be ok to stuff the bird with regular stuff (for my brother) and I could just eat the breast, right? Outside of the bird? I couldn't get her to see the risk there so I took it up a notch - in my family I'm the one who makes the gravy, mainly because no one else wants to try...

I initially used a "generic" one from Walgreens, but after a year it started acting weird. I thought it was slow (taking 30 seconds to read a strip) and it took a good amount of blood, I often would not get enough out. I think it was a "Prestige" brand repackaged as a Walgreens one. I switched to a Freestyle and it takes less blood, works faster, and also...

Hey Bluelotus - what kind of shoulder pain does this cause you? I am 34 and just found out I have minor scoliosis this last year. I found out because I had x-rays done for back pain - I have bad disks in the low back and I also have recurrent shoulder pain in my right shoulder, near the top, between my neck and arm. I have had liver pain, but that is usually...

ARCHIVED Anyone Know Of A gluten-free Dog Food?
skbird replied to mart's topic in Gluten-Free Foods, Products, Shopping & Medications
I buy Nutro Natural Choice Lamb and Rice meal at Petco or my feed store for my dogs. It has rice and rice gluten in it, but that is not the same as the evil gluten. I was getting glutened by my dogs' food, also my cats' treats. I get the cats Science Diet Light/Hairball formula, it doesn't have gluten in it either (though not grain free). I tried to switch... -

First giggling, and now this? Rachel, you are *SOOO* in detention! Stephanie -
I know for me I'm hypoglycemic and if I eat table sugar, I get a stomach ache that feels horrible, like burning or that I've eaten glass. I also get a headache/hangover, etc. I am less likely to get this with organic sugars or honey/maple syrup, but I have to limit them, too. They tend to not give me the stomach burning problem. I don't know why they...

ARCHIVED Are You Positive Or Negative About Having Cd?
skbird replied to Billygoat's topic in Coping with Celiac Disease
I guess I see the positive in this post as well as feeling a little defensive, too. I don't mean to put too fine a point on whining, but I know that when I've been glutened and felt like I needed to vent about it, I have appreciated being able to discuss here. This is an understanding environment and it doesn't foster people dwelling on their sickness, but... -
Hey Tiffany, that's cool your doc backed you up - though it would have been nice to be prepared for this to begin with. Anyway, hope things smooth out. I'll have to look into Premrose. I take another supplement, Brevail, that Bean/Michelle suggested on this forum and it is flax lignans that are concentrated and are supposed to help " flush" out excess estrogen...

ARCHIVED Green Bean Casserole... How Do You Make It gluten-free?
skbird replied to Jnkmnky's topic in Gluten-Free Recipes & Cooking Tips
I've read of other people using Funyans. I don't eat them so I haven't tried that. I miss those fried onions a lot - I used to sneak my mom's can out of the cupboard and eat the whole thing while reading a book in my bedroom. So as a result, the rare bean casserole we actually had was also delicious. I would love to figure out how to fry up onions like... -
Sublingual Vit. B12
skbird replied to jerseyangel's topic in Gluten-Free Foods, Products, Shopping & Medications
Is anyone familiar with the Trader Joes B6/B12/folic acid sublingual? It has stevia in it, says no corn or starch in it, but has natural flavors. I had one yesterday (I had gotten them for my husband and he gave me one, and I wasn't really thinking so I took it) and maybe 8-10 hours later I started feeling nauseated, then my stomach has just been really gassy... -
ARCHIVED Blood Sugar Question....
skbird replied to taweavmo3's topic in Parents, Friends and Loved Ones of Celiacs
My life improved greatly when I went low carb for two reasons - I cut out the sugars so that helped my hypoglycemia, and I also cut out gluten, inadvertently. Both cause mood problems in me. When I started eating more gluten products, things went awry. So I kept reverting to low carb. It was only when I cut out gluten that I found could maintain a good level... -
ARCHIVED Is Brown Rice Syrup Safe For Celiacs?
skbird replied to johnny's topic in Gluten-Free Foods, Products, Shopping & Medications
Lundberg's is gluten-free. But Deb is right, some do use barley malt as well. Check with the manufacturer and if you can't find who the manufacturer is, I just wouldn't risk it. Stephanie -
OK, one more off-topic response: Does your cat have a short tail like that also? So we both have look-alike cats and a sensitivity to nightshades.... Separated at birth? Stephanie

I remember reading here that someone on this forum had pretty good luck with Denny's. You may want to search for that in here. Stephanie

ARCHIVED Health Valley
skbird replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
Wow, that would be great if they were. I would be so happy to be able to add a couple of canned soups to my repetoire... I like Health Valley products but they kind of piss me off in their inconsistencies. For example, their chicken broth - they have a non-fat chicken broth in a can, a low fat in a can, an organic non fat in a can (has double the ingredients... -
ARCHIVED Telling Others About Gluten...
skbird replied to Jnkmnky's topic in Related Issues & Disorders
I have a friend with a kid who has Aspergers and ADD and every so often I bring up the gluten connection. She lives in England and I get the impression the gluten free diet is viewed differently there anyway. She knows very well how much food choices affect behavior in herself, she cannot eat certain things and is hypoglycemic. I don't know if it is the difficulty...
