  1. For me ,,ingesting soy causes palpitations and anxiety amoung other symptoms ( such as confusion, headache,dizziness ,brain fog,ringing in my ears,constipation, ect......)I feel like my heart is racing ( and my normal heart rate is low )

  3. The recipe used egg and flour ( I used rice flour) as a binder. I did use the cottage cheese but I did not use the cheddar cheese .   6. This may be why your story hit a nerve for me . I am only 18 months into my " official " diagnosis ( even though I have been gluten free for 3 years) The pain and suffering is still quite fresh in my mind ( and body). I am still too close to the pain and suffering not to be emotional. And the anger, the anger of going 40+ years mis and un dignosised still...

If your bottle of vegetable oil just says vegetable oil as the ingredients , chances are it is almost all soy oil . ,, the reasoning was something like ,, the soy oil is so processed that it is no longer considered an allergen so there for no longer need an allergen label, quite the legal loophole things like tuna ,candy, lip balm,shampoo, vitamins...
  10. Soy is EVIL ! Most vegetable oil ( in the US) is soy oil. Due to a legal loophole it does NOT have to have an allergy warning on the label.
  11. Yep accidental glutening happen,, you learn how to prevent it as much as humanly possable . And if it happens you deal with it and learn from it . Yep, it does become 2nd nature at home and out. Eating out ,, I dont do it,, for me it is because of my soy issues not gluten issues. If I had to deal with JUST gluten issues I would be in heaven ...

  13. The symptoms are different for everyone . For ME, Gluten gave me The big D and abdominal pain. Now if I experence CC I get EXTREME tummy pain, EXTREME abdomenal pain,EXTREME abdomenal PAIN and EXTREME D.   16. some things I react to all most immediately , some things it takes days to react, most times my symtoms last for weeks after exposure ,some time I react all most immediately AND still days later . a one week trial is not near long enough.
  17. Exactly I had so many intolerances at that point in time there would have been no way to single them out without a true elimitation diet .
  18. A TRUE elimitation diet is extreme.Not something to enter into lightly. And you are talking months not weeks for an elimitation diet . When I did my elimitation diet I elimitated EVERYTHING Inclucding coffee ( execpt 5 foods ,,,,,rice , ground lamb, cabbage,peaches and peas and water to drink ) for 2 months before even considering starting to add foods...
  19. You can have issues with chicken that have nothing to do with gluten. Some people ( like me) just do not tolerate chicken . signed , a " for real " celiac .
  20. I just recently bought quinoa to try again. The first time I tried it I was fairly new to gluten free and still quite ill . I did not react well. I am hopeful that since I have had quite a bit of healing occur that I will be able to tolerate quinoa now.   23. you could use Udi's (gluten free )pizza crust and cut in to bread sticks. crackers ,I use Hot Kid rice crackers ( the only ones I have tried I do not react to ,, I am super sensitive ) I also make a white sauce to use instead of condensed soups . I have reinterduced dairy so I use rice flour, milk,butter and a bit of onion and mushrooms in my white sauce...
  24. I had been vegan most of my adult life untill my celiac dignosis .I went "nearly " paleo for awhile after my dignosis because meat was about the only thing my body tolerateing at the time. Now I am slowly working my way back to (atleast) vegetarian . I still have so many food intolerances that being vegan again does not look promising .
