  1. After having intestinal parasites I am convinced that I would rather be gluten free FOREVER than deal with parasites EVER again !!!!!!!!!!!
  2. As someone who has celiacs and recently had to deal with intestinal parasites , I am shaking my head in disbelief. That anyone would intentionally inflict that kind of pain and suffering on their body is just plain insane .
  3. I havent eaten meat in awhle but all this talk of lamb reminded me how much my body likes lamb. I could not find any ground lamb so I picked up some lamb shoulder cuts and put it in the crock pot. ( the only way I can eat meat if it is not ground up is to slow cook it untill it falls apart ) To go with it ,I am thinking some rice sauteed with red onion...
  4. When I went gluten free it took me about 6 - 8 weeks to get past the withdraw. For me , the withdraw was similar to my withdraw when I quit smoking execpt my gluten withdraw was harsher and longer .
  5. note to self :: put ground lamb on shopping list Lamb ( and rice) saved me when I could eat nothing ( and I do mean NOTHING) else and is still my most favorite safe meal .

  7. if you find a celiac specialist please let me know. I ( as of yet) have not experienced a doctor who I would consider a celiac specialist. To me,,a specialist is someone who knows more about celiac than I do.   9. this your body , your choice I thought I needed an official diagnosis but ultimately when I " finally" got one it really did not make any differnce . My diagnosis did not make it any eaiser for my children or grandchildren to get an official diagnosis ( should have but did not ,, stupid, uneducated doctors ...) Official or not the only treatment...
  10. I agree,, when in doubt check it out. chances are is it "just " the soy but making sure is a good thing.

  12. A rotation diet is different than an strict elimination diet. While rotating foods can be helpfull in some circumstances,,, to idenify an intolerance an elimitation diet is best.
  13. When I did my strict elimitation diet I ate ground lamb ( easier for me to digest ) white rice ( again for me eaiser on the tummy) pea,carrots, canned peaches . I also ( now that I think about ) used olive oil to make these foods into a stir fry . No coffee ,tea or other dirink execpt water. The key here is strict. You will need the rice or sweet potatos...

  15. I have a question . I did not read the whole thread so I am not sure if it has been addressed again but since the up grade,, my spell check is still not working . Is it because of my server ( foxfire) , the upgrade or am I missing something ( would not be the first time )
  16. patience , luv, patience with your self and your body. Give your body the time it needs to heal. Celiacs is a journey not a sprint . The road ahead of you may be a long one , just keep headed in the right direction and you will be well.

  18. My reaction to gluten-free oats is : pain across my shoulder blades ( upper back) much like a gallbladder attack and burning in my gut and later lower abdominal pain,
  19. becasue of the origin of gilberts I have always wondered about its involvement in celiacs.. I am very careful not to become dehydrated Also .I am very very careful with ANY vitamins and medications I take and I avoid additives and preservatives in my food ( as much as possaible )to be sure not to over tax my liver , My first sign that my bilirubins...
  20. I also have liver issues . I was diagnosed with gilbert's disease becasue of elevated level of unconjugated bilirubins. My liver enzyme levels were also all over the place. My GI doc said if my emzymes kept getting worse he would want to do a liver biopsy for liver disease as a precaution but he felt it was because of my celiacs. My enzyme are still off...
  21. I also have been able to add dairy back in to my diet. It took me awhile to find all my intolerances but once I did and my gut had a chance to heal I was able to add back dairy. Currently I eat cheese, yogurt,butter and cottage cheese on a daily basis . I was dairy free about 2 years before I even attempted to add any dairy back .
  22. I was able to add both dairy and eggs back into my diet AFTER I found the rest of my intolerances and AFTER some major healing had taken place . I am realistic enough to know that with my intolerances I will ( probaly ) not be able to vegan and healthy. Being healthy is what it is all about So I am grateful that eggs and dairy are something that I can...
  23. Before going gluten free I was vegan. After going gluten free I had no idea how to eat ( and was still sooooo very ill) I went mostly paleo .Even then the meat I could tolerate was limited and had to be ground up. Now that I have healed ( mostly anyway) I am vegetarian. I do eat eggs, cheese and on rare occasion fish. I will (probably ) not be vegan...
