I didn't think it would matter, but it is good to hear you have done it as well. I am guessing the fat content is lower with the cottage cheese, perhaps (which is what I may need after all the goodies I have eaten this week)

This sounds pretty good--thank you for the recipe. One question--hub is not fan of cottage cheese, but he's a good sport and will eat it if I make it -- but, I see no reason not to sub ricotta --what do you guys think?? Will it make it too moist?

Yes, and I know that those with no obvious symptoms tell me they have absolutely no way of knowing if they have been glutened. No "barometer" of sorts. Whereas, I always know for sure. Not sure which of us has the advantage. I think I'd prefer no reaction, personally, as I have been in hell from gluten, but I could see where some would be tempted... -

Not good. That does not happen without a reason. I had parasthesia throughout my entire body from gluten-induced neuropathy. I had ataxia, burning nerve pain and various other neuro issues. Most doctors just say "no gluten" after DX...they never mention secondary lactose intolerance (which is very common) or tell you how long it will take or do follow up testing for vitamin deficiencies. IMHO It does not matter how much gluten is ingested in terms of PPMs or how violently you react or if you do not even react at all. (I personally suffer symptoms for as long as 12 days after CC) We are all equally affected by the gluten because the AUTOIMMUNE response is triggered whenever ANY gluten is ingested.
