  1. I didn't think it would matter, but it is good to hear you have done it as well. I am guessing the fat content is lower with the cottage cheese, perhaps (which is what I may need after all the goodies I have eaten this week)
  2. He sounds like a good GI to me!
  3. This sounds pretty good--thank you for the recipe. One question--hub is not fan of cottage cheese, but he's a good sport and will eat it if I make it -- but, I see no reason not to sub ricotta --what do you guys think?? Will it make it too moist?
  4. This is rather ironic since I made gratin dauphinoise last night for dinner ( not kidding!!) and unless I am missing something, there is NO flour in that, hon. Potato, butter, cream, cheese, S and P, nutmeg and garlic rubbed in the gratin dish. Not sure if that was it that may have "gotten" you, but the point is: You do not feel well (sorry ...
  5. Beebs--let us know what they say!
  6. Yes, and I know that those with no obvious symptoms tell me they have absolutely no way of knowing if they have been glutened. No "barometer" of sorts. Whereas, I always know for sure. Not sure which of us has the advantage. I think I'd prefer no reaction, personally, as I have been in hell from gluten, but I could see where some would be tempted...
  7. Encore (I do not say leftovers ) from last night's New Year's Eve dinner I made: Garlic-studded filet mignon roast, mushroom/port wine sauce, potato gratin dauphinoise, caesar salad, champagne and flourless chocolate cake with a ridiculously rich ganache. I am such a piggy.
  8. I am with Lisa.... as far as I know, maize is corn. no worries.
  9. absolutely not!! sometimes printed words (where you cannot see someone's face or hear inflection) can be misunderstood but in this case...I assure you--I meant nothing either--except agreement on this topic of "magical anti-gluten pills " !! Happy New Year to you.
  10. Oh no,...I was not thinking that at all , hon!!! --I am agreeing with you on all aspects!! Just reaffirming what was said...about being knowledgable and using our heads! No magic pills protect us from gluten. (if only!!) Cheers!! Beautiful baby, BTW!!!
  11. IDK if being in the dark is any better than being misguided. Neither are very illuminating or helpful. I think we have to rely on some accepted science once and a while. However, people may have differing opinions, and present that information as "fact". THAT can cause confusion, for sure. (for example, those who suggest we can take a pill and...
  12. Me too. Seriously. We celebrated with champagne and I danced with wild abandon in my living room last night !! I told you--at one point, I could not even walk without pain or shortness of breath or without listing to the right or left or banging off a wall. I spent the last 3 NY Eves in agony, gluten delirium, burning with pain, just a freakin...
  13. I never, ever think you are rambling, honey. um, Hypotonia, you say.....?? https://www.celiac.com/articles/800/1/Wide-Range-of-Neurological-Disorders-Associated-with-Celiac-Disease/Page1.html
  14. I do not understand why this new GI does not run the after- DX blood work for CBC, ANA, celiac panels, vitamin defs--it's his job!!? Mine does. And, Sorry to the OP for us getting off topic here!!
  15. Sorry, hun. Don't know what to say about your hub's attitude. I hope he never gets ill and needs your support. As for ANY doctor doubting your DX --especially after you had a proven biopsy????!!---and not following up with after-care???--I suggest you take all your records and get a new doctor. You deserve better. You don't live in upstate NY by...
  16. Not good. That does not happen without a reason. I had parasthesia throughout my entire body from gluten-induced neuropathy. I had ataxia, burning nerve pain and various other neuro issues. But the total numbness was last to show up. My foot went completely numb once when I was sitting and when I stood up and tried to walk, my ankle buckled right under...
  17. Good for you! I have been called that too. Also, the Gluten Nazi, the Gluterminator, the Celiac Whisperer, She Who Sees Celiacs Everywhere. I don't care. I call it as I see it--it's POISON.
  18. hoo boy..where do I start?? Most doctors just say "no gluten" after DX...they never mention secondary lactose intolerance (which is very common) or tell you how long it will take or do follow up testing for vitamin deficiencies. I was just like all of you--and frantically tried to figure out what else was keeping me ill. I hate to say this because...
  19. yes,I do understand about the <20 PPMs -- Thanks for clarifying this for the OP. I did not mean to imply that recovery was not possible--sorry if that what was it sounded like. Obviously, I agree that people recover the villi--otherwise, I would still be very sick. Perhaps my use of the word "damage" was a poor choice. But it is my understanding...
  20. Many of us eat out safely at restaurants.(And there are those who disagree with this statement) You need to pick and choose which ones will be able to accomodate you. Diners are NOT a good choice. They do not have the time or the facilities to make separate meals. They mass-produce food. The IHOP??--not a good place An upscale restaurant or...
  21. Oh dear .....Well, new house rule?--no eating the wheat thins while working the puzzles, everybody!! Maybe wipe the TV remotes down...?? Maybe someone who lives with WEs can pipe in here and give you more advice about the practicalities of it all.
  22. I trust this idiot is no longer your doctor?????!!!!
  23. IMHO It does not matter how much gluten is ingested in terms of PPMs or how violently you react or if you do not even react at all. (I personally suffer symptoms for as long as 12 days after CC) We are all equally affected by the gluten because the AUTOIMMUNE response is triggered whenever ANY gluten is ingested. From the Mayo Clinic: "When...
  24. While you are figuring out the sulfite issue, you mention you got the CC issues under control...that's a big step!! Good for you!!!
  25. Fingers crossed, hon! I hope it helps!! You may already know this, so forgive me if I am repeating information. When you introduce a new food, I found it best to do it ONE at a time--and pure. Not IN anything. Some folks on here say they have a soy problem, but they suspect it because it is soy lecithin in chocolate or soybean oil in mayo. Well, how...
