  1. So, we thought we'd try this stuff suggested in Jules Shepard's book called Expandex (which is tapioca starch). She suggests using it to make bread more "gluteny" and it did seem to work. The loaf rose well--quite high actually-- and the bread was "squishy" and tasted good. But, half a sammy in.... and I started to have heart palps and feeling sort...

  3. Personally, I'd wait until it was PROVEN in hundreds of celiac patients for MANY years before believing it would work. I am skeptical, too. I simply would have gone stark raving mad had it not been for his unconditional love and support these past 3 horrifying years. He even went gluten-free with me and bakes our gluten-free bread and knows how to read labels...

  8. I use Now Brands D-3. (I need my vitamins to be soy fee, too) I had to do the 5000 IUs at first and it boosted my D levels right up. I will move to the 2000 in time.
  9. I just told my whole family about my genetic testing and since one cousin had lymphoma and another, melanoma, I felt I should tell them about my test results. Constant D, fatigue and frustration, inflammation from celiac, loss of nutrients and (I am sure) anemia, etc. (have they checked you for that, by the way?) will make even the most sane, calm person feel overwhelmed, scared and frantic.   22. I agree. Some people with celiac disease are asymptomatic--yet have completely flattened villi. They are stunned to learn they even have the disease! When hard pressed, they will say they did have headaches or some heartburn or reflux, but they did not associate it with celiac disease. Most people think it is a disease that is all about "smelly stools...

  24. I am thinking the same way! It seems whenever I try a "gluten-free packaged product", I feel sick. If I stay "whole foods", or make my own bread, I keep making progress. Hope you figure out what's getting to you. I found my husband going gluten-free with me (entirely on his own) so no gluten filled bread or other food was coming in the house... and...
