All those antibiotics you mentioned she was administered....have you replenished her gut bacteria with some probiotics? Doctors push the antibiotics, but fail to suggest balancing the gut flora with the "good guys". Creates a world of trouble in the gut, and then the entire body. She is not a drama queen if she is reporting pain to you. (Trust me, I know drama queens lol ) I had leg pain as a child and all sorts of infections, crazy pains and "tummy bugs" and if my parents had known about the possibility of celiac, it would have saved me a lifetime of crap health and complications. Just thinking out loud here, but I would think that most starches, flours, baking soda, baking powder, (like dried herbs and spices) can all lose their effectiveness, flavor and texture after a few years, if not refrigerated. It can be yes, but my point was that having celiac does not mean you will be predisposed to it. . Women who are not celiacs may develop it as well and not all women with celiac have it. See what mean? And honestly, over 300 symptoms are "associated with" celiac as we know, but it does not mean celiac is to blame for anyone developing those other conditions... -

Indeed... but it is shelf stable and can withstand all temps (which explains why both of us can store it without it spoiling ) I think we represent the two climate extremes at this given moment. This begs the question, then...if some of us are having sporadic bouts of symptoms even in the absence of gluten or possible CC and we have symptoms reminiscent of a glutening then perhaps we are not very sensitive to trace gluten, but in fact, experiencing symptoms due to accumulated histamine in the body. Addy, sometimes we get lucky and a doctor actually knows as much as we do. Even my GI doc says I know more about celiac than his colleagues. (scary, right?) And Jess knows when we talk about doctors with disdain and sarcasm, based on our cumulative bad experiences, we do NOT mean any disrespect to her. She's different. -

I'd eat risotto for any meal. Your husband sounds like me---as a child. Personally, I'd get some new stuff. ( but I have a thing about flours and starches and use-by dates) I saw a health report recently on TV where they investigated the "sell by" date issue and they found that food was actually still quite good past the "sell by" date. But, you would not have had villous blunting present with non celiac gluten sensitivity, so it's not really a question of your villi healing. I do not really know why you don't have a recurrence of those symptoms you describe. IMO, you would likely have some pretty obvious symptoms after a week on gluten if you were a celiac, but you may well notice... -
Ah, the onset of menopause....so much fun. I started a horrible peri-menopause at 39. I put up with that nonsense for 8 LONG years. I had endometriosis, fibroids, uterine cysts, bleeding 2/4 weeks, nighttime sweats and anxiety. I peeled off layers of clothes while I was teaching at the front of a lecture hall.
