ARCHIVED Looking For Really Yummy Bread, Hamburger Buns, Etc.
bartfull replied to icelandgirl's topic in Gluten-Free Recipes & Cooking Tips
I once got some english muffins from the freezer section at the health food store. I can't remember the brand right now, but they too were really thick. They had more of a bread consistancy than and english muffin consistancy. I cut them into three slices instead of two. I used the top and bottom for a bun and saved the middle slice for toast. -
ARCHIVED I Need Pizza!
bartfull replied to gemlechner's topic in Gluten-Free Foods, Products, Shopping & Medications
It depends on where you live. If you're a New Englander you're probably out of luck. If you live elsewhere in the country you can probably find a frozen gluten-free pizza that tastes better than most pizzarias in your area. I have been all over the country and long before I went gluten-free, I could never find a decent pizza outside of New England. There... -

ARCHIVED Xanthan Gum: Where Does It Come From?
bartfull replied to emsimms's topic in Food Intolerance & Leaky Gut
Emsimms, I have a severe corn intolerance. I can't eat anything out of a can because a lot of companies make the plastic lining in cans out of corn protein. I can handle corn STARCH because there is no protein in it, but that corn plastic gives me a bad reaction. If you've been eating out of cans with no problem it could be the brands you use still use the... -
ARCHIVED Wheat In Coffee
bartfull replied to bincongo's topic in Gluten-Free Foods, Products, Shopping & Medications
Dunkin' Donuts whole bean. Grind fresh for every pot. Just the aroma when grinding is worth the "hassle", and the flavor...oh my. -

If you like those multi-grain breads with all the nutty bits in them, Canyon Bakehouse is really good. -
ARCHIVED Lowering The Grocery Bill
bartfull replied to user001's topic in Gluten-Free Recipes & Cooking Tips
Another thing that's good is mix some gluten-free bread crumbs, sage, salt and pepper, then put your suqash slices and some mushrooms and onions in a casserole dish. Stir some melted butter and the bread crumb and spice mix in until everything is coated. Bake it in the oven until the veggies are soft. -

Mmmm...patty pan squash. You can use it anywhere you would use yellow summer squash. Steam it, or for those of you (unlike myself) who can eat corn - dip slices in egg and then dredge in corn meal. Fry it up in a pan and then put it on some gluten-free bread with melted cheddar. Maybe a little mayonaise. Almost enough to make a person become a vegetarian... -
ARCHIVED What Were Your Symptoms Of Celiac Besides D?
bartfull replied to hazelnutty42's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Psoriasis and insomnia were my most noticable symptoms. -
ARCHIVED Accidentally Ate Gluten
bartfull replied to Eddierickles's topic in Coping with Celiac Disease
We're all different. My digestive symptoms were mild and confined to "the next morning" if you get my drift. But the one and only time I have been glutened since I went gluten-free over three years ago I had nausea within twenty minutes and I didn't have to wait until the next morning to have those problems. Quite a few here have much worse symptoms after... -
ARCHIVED Barley Starch?
bartfull replied to pauldude's topic in Gluten-Free Foods, Products, Shopping & Medications
Well, I have a corn intolerance and I know that CORN starch has no corn protein left in it. Don't know a thing about barley starch, but I wouldn't chance it. It may not have any protein in it, but why risk it? -
ARCHIVED Not Sure What To Do.
bartfull replied to kingman's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Kingman, if there is a Shopko in your area, they have a line of vitamins called Shopko Naturals that are gluten, corn, soy, dairy, salt, yeast, preservative, and artificial color free. I have checked but although you can buy some stuff from Shopko online, they don't sell these online. I wish they did so folks who live where there is no Shopko could get them... -
Soy won't be hidden. It is one of the top 8 allergens and so at least in the USA it must be listed in the ingredients label. (Not sure about other countries.) I didn't eliminate soy because I thought it might bother me. I KNEW it bothered me because I reacted to it. That was early on in my gluten-free life. It may be that I wouldn't react to it now but...

ARCHIVED Coping With The Isolation And Rage
bartfull replied to whatever's topic in Coping with Celiac Disease
How are you feeling now in the restricted diet? If you are feeling OK, it's time to start a food and symptom diary and start adding foods back. While a lot of us have further intolerances, not everyone with celiac does. Cross-reactivity is a myth, plain and simple. The first food you should trial is corn because corn is in everything. If you can successfully... -
ARCHIVED So Tired, Can't Stay Awake.
bartfull replied to beth01's topic in Coping with Celiac Disease
I'm another one who went from insomnia pre-gluten-free to craving constant sleep post-gluten-free. It's only lately (over three years in) that I have gotten my energy back. With my corn intolerance on top of celiac, I couldn't find any vitamins I could take. But I finally found some and after taking them for a few months I can actually sleep 7 or 8 hours... -
ARCHIVED Buying Beverages From A Restaurant
bartfull replied to BlessedMommy's topic in Coping with Celiac Disease
I just drink coffee when I'm out. Regular in the daytime, decaf at night. Depending on the restaurant you might also be able to get bottled water or "sparkling water" (seltzer). -
ARCHIVED Most Ridiculous Gluten Comment I've Heard
bartfull replied to C-Girl's topic in Coping with Celiac Disease
Yep. They are cooked in sunflower oil. But let me tell you, if you can find Boulder Canyon Olive Oil chips, TRY THEM!! They are not greasy like Kettle Brand, and they are without a doubt the very best chips I have ever tasted. Plus, being cooked in olive oil, I tell myself they're good for me! -
ARCHIVED Most Ridiculous Gluten Comment I've Heard
bartfull replied to C-Girl's topic in Coping with Celiac Disease
No employees, but I host a weekly jam session and they have all been informed that unless it's gluten-free, they can't bring food in here. As a matter of fact, last year they threw me a birthday party here and the food was Udi's gluten-free chocolate muffins (with candles) and Kettle Brand potato chips. I supplied the Dunkin' Donuts coffee. I also tell the... -

I sell gluten-free guitars! I own a guitar store and I don't allow gluten foods in my shop. -
ARCHIVED How Do You Cope With This Frustrating Disease
bartfull replied to madminx's topic in Coping with Celiac Disease
It is probably NEITHER one that was CC'd. It is probably just that you are still healing and like the rest of us, you will have good days and bad days at the beginning. If you haven't read the newbie 101 thread in the coping section yet, please do. It will help you a lot. -
ARCHIVED Gluten-Free For The Entire Famly? When Members Can't/don't Want To Be Gluten-Free
bartfull replied to RainKitty's topic in Coping with Celiac Disease
Has your daughter been tested. Celiac runs in families. If it were me, I'd do as some of the others suggested and let her eat gluten as long as she is careful and makes her sandwiches in a different area AND learns to clean up after herself. Dedicated peanut butter and other condiments are a must. I say all this because even if she has been tested...- 35 replies

I have lost all of my family - mother, father, husband, sister, grandparents of course, and quite a few close friends. I never had kids. I am basically alone in the world. But I moved to the place I have always belonged (but didn't know it) ten years ago. Since then I have been happier than I've ever been in my life. I opened a business and spend my days...

ARCHIVED Any Other Sober Celiacs?
bartfull replied to brooklyngal's topic in Coping with Celiac Disease
Get a dart board and start a league with your friends. We used to play at a different person's house every week and the winning team won the right to wear the "Citizen Dart" t-shirts for a week. (And if you felt mean you could bring it back the following week without washing it first!) If darts isn't your thing you could choose another game. Make it a... -
ARCHIVED Don't Know If I Should Leave My Job Or Not!
bartfull replied to bakergirl90's topic in Coping with Celiac Disease
Airborne flour gets breathed in. It gets to the back of your throat where you swallow it. I hate to say it, but I think you should quit.
