No, she does not need both genes for it. Just having the gene does not mean that you have Celiac. But, about 99% of people who have Celiac, have one or both of the genes (they are still trying to figure out if there are other genes involved). susie-just so you know, i was also diagnosed with fibromyalgia before I was diagnosed with Celiac. Once I went 100% gluten free, I don't have pain anymore. I only have the pain return when I have been glutened (and it is one of the tell tale signs). I think that I was misdiagnosed and never had fibro! I believe it was one of the Celiac "experts" at Columbia (Dr. Green, maybe?) who said recently that pure, uncontaminated oats are safe. I think there are two brands---McCann's is one, and I can't think of the other one. I just made a dessert with it last weekend and it was great! I don't own any books except one cookbook which I really don't use....pretty much everything I get is online! An endoscopy/biopsy is usually only done if one is eating gluten....so if you go on the gluten free diet and have a biopsy, it will likely come back negative (unless you haven't finished healing).
