  8. Yes, and I would guess that most do. The CBC doesn't check anything that measures the body's response to gliadin. The only way to know if you have Celiac is the bloodwork/biopsy.

I think genetic testing is certainly helpful, but not the end all. 30-40% of the American population has one or both of the genes. 1 in 133 Americans (slightly less than 1%) is estimated to have Celiac.   16. Don't worry----you won't have to cancel! You can look for gluten free restaurants near where you are staying. When I travel, I always bring my own food. Make everything ahead of time, and put it in meal size containers. Stay in a room with a fridge and microwave and you'll be fine. If you go out to eat with a group, and its an unsafe restaurant...
  17. Once you go gluten free, you can still eat pasta.....just a different kind. Check out Tinkyada (rice-based) pasta. It comes in all the normal shapes and sizes and tastes great.   19. You should be consuming gluten if you are still undergoing testing for Celiac. Taking gluten out increases the chances of false negatives. The damage caused by Celiac happens when you are consuming gluten, and heals when gluten is taken out.

  25. If gluten is your problem, and you've only been gluten free for 3 weeks, then I would assume you haven't fully healed yet. It may not be another food intolerance. Healing doesn't happen overnight. Even if you are 100% gluten free, your body still needs time to adjust.
