I swear by Bob's Red Mill flour blend. My mom made me gluten free choc chip cookies this weekend, that are delicious. She also made me a gluten-free choc cake with their mix....the whole family ate it and loved it. My mom is a wonderful baker, and has luckily found a way to make anything and everything for me, so that I have all the 'comforts' of home... -

There are a couple possibilities. 1. if you ate ANYTHING without knowing what was in it---thats a huge risk. this could have easily had gluten in it, or could have had something dipped in it if it was at a public event. 2. The food labeling law was passed in 2004 (august) and took effect Jan 1 2006. All of the 8 main allergens must be listed. One of those is wheat. Wheat must be identified if it is used for something like mfs, flavorings, etc. (if so, it would say something like "modified food starch-wheat" etc. here is some more info on it: Open Original Shared Link... -

FWIW I was dx'ed with fibro, but I knew I didn't have it.....a few months later, was dx'ed Celiac, went gluten-free, and my symptoms went away. Never had fibro, just had the "symptoms"---that were caused by the gluten reaction.

Your doctor can also order the genetic test. Enterolab does NOT diagnose Celiac. The gold standard for a rock-solid diagnosis is the biopsy. You should also have the bloodwork done too----not just the biopsy (if you choose to go that route). For some, clearly positive markers on certain blood tests are enough to "know" its celiac w/o the biopsy. -

If you have a positive biopsy, then you have the gold standard diagnosis for Celiac. He probably wasn't sure what you had, did an endoscopy to look for various things, one of which was Celiac. -

he could have EE, not have celiac, and one of his triggers could be gluten products. or, he could have Celiac and EE, and gluten could/could not be one of his trigger probems for EE (but obviously is for Celiac). -

get a copy of the pathology report that discusses your biopsies. from Open Original Shared Link : "The features in a duodenal biopsy suggesting celiac disease include an intraepithelial lymphocytosis, villous atrophy, crypt hypertrophy, abnormal epithelial cells and increased chronic inflammatory cells in the lamina propria." -
