  1. Acesulfame Potassium is an artificial sweetener. Often used in conjunction with Aspartame so it tastes less "aspartame-y". Safe if you are okay with artificial sweeteners, in the sense that it's gluten free.

  6. My naturopath gave me Citrecidal. After months of agony, it was the only thing that worked. I also did the diet, but I eat a whole foods diet anyway, and the only food I had to rid was fruit - so we don't think that made or broke me. Good luck!
  7. That's my recipe Jason, it's really adaptable. Milk for water, and flours, too. Nearly everyone uses a different flour combo, just keep the flours and starches separate. Feel free to email or PM me with any questions about it.
  8. I just use my pre-gluten and casein-free recipe and sub vegan and safe versions. I made condensed milk from scratch and use that.

  12. I've two fantastic doctors in Southern Ontario - a GI, and an Internist. I hate doctors and these are two of the only ones I've loved. Let me know if you are in this area; I can give you their info, but you will need a referrel. I also see a fabulous neuro if you also need that.

  18. juliela, perhaps you are unfamiliar with a candida diet. in your list, most of these are not applicable. Mrs.M, what about pancakes (or flatbread)? you can have them savory - even like zucchini cakes and stuff like that. nori rolls? the pizza dough in Mission in the Kitchen is yeast free, if that helps... are you egg free? i forget if you're...
  19. YellowRose, When I first created the bread, I never used rice. I am allergic to it. I also use tapioca, not cornstarch. For the main, I use Bob's Red Mill All Purpose, or a mix of amaranth, and whatever high nutrition and fibre grains I have on hand.
  20. WHen you cut out gluten and casein, it could be possible that you are not getting all your vitamins, minerals, fats, and so on. I'd keep a food journal, and make sure you're still eating balanced.
