  1. yes, I totally agree, I thought I'd never be able to spend a full day away from my kitchen, but this has made it doable. hoping Santa finds his way to you quickly this year. when you start playing with it, let me know if you have any questions. I'm far from an expert, but have done a lot of playing with it.
  2. I had to come back and report my extraordinary success this past Sunday. I had 3 events to go to, leaving my house at 11AM and getting home at 11PM. normally this would have freaked me out, or I just wouldn't have done a day like this. first was a bridal shower, that was easy, I brought a salad. then from 4-6 we were out at a birthday party for my...
  3. hi maximoo, they sound great, hoping my BJ's gets them. looks like we're neighbors, have you ever been to Green Wave Cafe?
  4. my latest project was experimenting with apple chips. beyond great success. I sliced them up, sprinkled a tiny amount of cinnamon/sugar and they were awesome. my daughter took them all home and asked me to make more. she's not celiac, she just loved them. i have another load going now and also some banana chips too. I have bought these types of chips, but...
  5. ok, thanks. I spent A LOT of time researching how to do full meals to take with me when I travel, and the very best resource I found and the guy I got my best info from is Glenn McAllister, his site is Open Original Shared Link. it's not a gluten free site, but it is easy to convert the ideas and recipes he gives. he also has a cookbook and my wonderful...
  6. oooooh, wouldn't it be nice if toasting removed gluten? wow, I had that visual and was so happy for a second
  7. icelandgirl, I can honestly say that giving up chocolate was way worse than giving up gluten, soy or dairy. I remember getting into bed and pulling the covers up over my head after that news
  8. as promised I am updating here with my latest experimenting. I found a wonderful website, it's actually done by a man for info on meals to go out backpacking for sometimes weeks at a time. his advice is pretty great. not sure if I can share the site here, I will if it's allowed. anyway, I got a recipe for Italian style chopped meat with pasta. sort of like...
  9. a few weeks after going gluten free 2 years ago, I knew I felt better, but there was just a nagging feeling of unrest in my stomach. I actually went to an allergist for food testing, and she found allergies to dairy and soy. once i got rid of those i was golden. fast forward to a few months ago, some nagging feelings came back, now I've had to cut out chocolate...
  10. it's just hubby and me here, but kids and grandkids come over alot. my house is gluten free. that's it. this is where I feel safe. when my family comes over we eat, we bbq, no one suffers. they don't need gluten that badly. if they lived here, it would be the same. I make no apology, I have to know this is the one place where I don't worry. hubby is...
  11. shortly after going gluten free I baked cookies with my granddaughter, I thought well, as long as I wasn't going to eat them I'd be ok. wrong. I was very sick after. inhaling it, having it on my hands as I was working with it, airborne in the kitchen. not good at all. right after that I converted my kitchen to completely gluten free. it was quite a process...
  12. I hope you are still feeling ok and will continue to do so. it's a crap shoot, hoping you dodged the bullet.
  13. mamaw, so glad you're loving this thread! I am so glad it is giving you some ideas. yesterday I had planned to prepare more meals but didn't get to it. I will post when I do more and let you all know what works and what doesn't. hugs right back
  14. w8in4dave, I have a vacuum sealer and it's awesome for this. I love the idea of a small teapot!
  15. you can move the thread if it's best. if it was for use at home I wouldn't do it. I have had a huge problem when I had to travel, and we are going up north for Thanksgiving. I was already stressing about it. it's a plane ride, and I felt a cooler chest just wouldn't cut it. that is the main reason I am beyond thrilled now. we also have a wedding in...
  16. I use parchment paper I got in the dollar store for the liquidy items. and on that note, not sure if I already posted, I actually put almond milk on a parchment paper sheet with folded up edges to make it available to take out to use in iced coffee. it turned it into a powder!!!!! little things I am figuring out just by puttering around with it. jerky...
  17. kids understand anything we take the time to explain. my 6 and 3 yr old granddaughters know I won't touch gluten at their house. when I take them out to eat, they know I won't help them cut or deal with their food. they completely get that grandma will get sick from their food, and it works out fine. good luck
  18. I just eyeballed it to cover. the first bowl of chili I made I just added a bit, and when I checked it it had completely soaked in so it didn't look like the original, so I added more and it left me with the sauce. it's really trial and error, you can't dry something too much, or add too much water. it will just be saucier. and just to emphasize I am...
  19. hi again. so far anything I tried in a full meal came back to its original life. you just have to have access to hot water, add the food to a bowl and add the water. let it sit and its just like what it was before you started this whole process. the chili was exceptional, just as it was. it soaked up the hot water and I enjoyed the heck out of it. I...
  20. they are definitely good for dried fruit and herbs, chips and the like. but that stuff doesn't get my heart pumping with excitement. you can do full meals, bag them and they don't need any refrigeration. I have them in my cupboard, and apparently will stay for quite some time. right now I am making a beef veggie stew that is cooking on stove top...
  21. Thanks, it's the large 9 tray square Excalibur. expensive for a one time purchase, but well well well worth it.
  22. this is so incredibly awesome I want to go outside and shout about it. so they got me the 9 tray Excalibur. expensive but so worth it, and as it is a one time investment in my ability to eat outside of my house, really not expensive at all when you think about it that way. a few successes I've had so far: I made a huge pot of chili, then dehydrated...
  23. I wanted to share how my life just got better. for my birthday my family got me an amazing food dehydrator. this has been an eye opening adventure. to date I have made all sorts of veggie chips, but the part that is giving me a more open life is I am dehydrating whole meals. there is a learning curve involved in this, but every day I am trying something...
  24. good luck!
  25. after I went gluten free I felt much better, but still had underlying issues. further testing revealed dairy and soy allergies.
