Flattening of the villi is classic for Celiac. A gluten autoimmune response, resulting in blunted villi is generally a diagnosis of Celiac. On occassion, other food intolerances may cause this, but it is far seldom the reason.
Do not go gluten free until you have satisfied your testing. A gluten free diet may alter the accuracy of the testing.
Here is the panel you should request from your doctor:
Anti-gliadin antibodies (AGA) both IgA and IgG
Anti-endomysial antibodies (EMA) - IgA
Anti-tissue transglutaminase antibodies (tTG) - IgA
Total IgA level.

Distilled vinegar
In the United States, almost all distilled vinegar comes from corn, not wheat. In the rare instances where wheat is the original source of the distilled alcohol that gets fermented into vinegar, the distillation process will remove all appreciable amounts of gluten (gliaden, peptide chains). A "mother" is added to the distilled alcohol to begin the process of fermentation, but research and interviews with industry experts (including the provider of vinegar to Heinz) indicate that gluten-containing ingredients are not used in this "mother" -- so distilled vinegar is safe. Please note that most vinegar listed on ingredients list is not distilled vinegar (please see the Vinegar entry below).
Rice
The usual concern about rice is that it has been enriched. According to research done by Ann Whelan and published in her Gluten Free Living newsletter, after talking to a staff dietition at the U.S. Rice Council, an enrichment mixture that consists of a carrier and synthesized vitamins and minerals which are applied to the surface of some white rice grains. Another interview with a manufacturer of the enrichment mixture revealed that the carrier is usually corn starch, sometimes rice starch, and, rarely, calcium carbonate, while the vitamins and minerals added are gluten-free. The reason enriched rice packages discourage you from rinsing your rice, and have you cook it in the minimal amount of water necessary is so that you won't rinse off this surface layer of added vitamins and minerals.
Vinegar
If food manufactured in the United States has vinegar listed as an ingredient, where just the word "vinegar" appears between commas (for example, "Ingredients: water, vinegar, tomato paste)" the FDA's Compliance Policy Guide for Vinegar requires that the vinegar must be apple cider vinegar. So if you see just "vinegar" listed as an ingredient (not "malt vinegar" or any other modification), the vinegar is apple cider vinegar

Hi. Does anyone know if "natural flavorings" sometimes contain gluten? What about on a spaghetti sauce ingredients list?

Yes, Natural Flavorings can contain gluten. Most likely, gluten in the form or barley, malt or rye. If wheat is used it must be labeled by law.

I drink alot of green tea, usually organic. I've noticed since going Gluten-free Casein-free that certain teas have given me either a casein like reaction (tight throat), or as today a stomach ache. Today I had Numi brand jasmine green tea and my stomach has been hurting ever since. I had had breakfast (gluten-free pancakes) 3 hours earlier so I don't think it could have been from that. What's the liklihood of tea getting cross contaminated with wheat?

You did not mention what tests you did have, but fatigue diarrhea, malabsorption, weight loss and flattening of the villi are classic Celiac symptoms. Villi atrophy is an indication of Celiac.
I have no experience with an acupuncturist and can't imagine how one could help if indeed you have Celiac. The only true relief and control of Celiac is a total gluten free diet. This site can help you more than any professional nutritionists.
Celiac Blood Testing is not 100% accurate. If you are not going to pursue further testing, there is no reason why you can't try the diet and see if it can help. A possitive dietary response is a diagnosis in itself.

Hi Everyone,
I am a desperate woman looking for some relief....still doing testing and all negative for celiac and crohn's disease. But all my symptoms - fatigue, diarrhea, malabsorption, erosions/flatten villa on small bowel, big weight loss in past year, now on gluten free diet for 3 week .
My question- has anyone had improvement in their symptoms from accupuncture or seeing a nutrtitionist. I saw accupuncturist yesterday. He feels he can help me.... had 1st treatment, more energy today but no better appetite like he said I would. He said it will take time, go back next week. Let me know if anyone else had good sucess. I also have a nutritionist name, but have not made appt yet.... anyone have good luck with this??? I have been going round for 15 months and am trying hard to get some form of a "nomal" life back, so any ideas so greatly welcomed!!! Thanks.

I called on Centrum Silver New Formulation. They stated that they do not add gluten, but they do not test either. I have had no issues.

UPDATE: (Called 3-14-08)
Centrum cannot certify the gluten free status of Centrum due to the Matlodextrin and Modified Food Starch. (I get the impression that the cheapest supplier of these ingredients, no matter what the source, gets the contracts)
In addition, it lists Maltodextrin on their Allergin statement on their website, IT DOES NOT LIST IT ON MY RECENTLY PURCHASED CENTRUM SILVER.

Required to use them, goodness no. In fact, the Administration has requested that we NOT used them. I too have difficulties translating.

Hope this isn't in violation of some forum rule. I only saw a short list and I didn't see anything that related to this.
DOes anyone have this book and would like to get rid of it or sale it really cheap? I really don't want to pay for a new book since I intend on ripping it to pieces and having it laminated and hole punched but I will since I have made several recipes out of the library copy and we have loved them. I thought I would check here first and see if anyone was clearing out their shelves or had a banged up copy they were going to pitch. OTherwise I will find one at the store tomorrow since I have a full week of cooking and perfer to hang the recipe on the cabinet above my mixing station. Makes it easier than a regualr cook book.

Have you checked the recipe section of this forum. We have accumulated a cazillion recipes all gluten free and many dairy and soy free. Take a walk around.

I am sorry that you and your daughter are going through such a difficult time.
Which ever doctor said that Celiac does not cause pain, needs a new profession. There are many,many here that can attest to that.
I am not sure that I can be of help, but have you checked your daughters meds to make sure that they are gluten free. In her fragile condition, the smallest amount of gluten can cause her pain and uncomfort. ANYTHING that she puts in her mouth or near her mouth should be clear of all gluten.
It may take sometime for your daughter to feel better. It took years for her to get to this point and it will take some diligence and time for her to recover.

That's an easy fix. Go to the upper right and click on the "options" box. Then click on "standard". That should do it and return you back to normal.

Just got off the phone. A very pleasant representative confirmed that Smithfield NO LONGER adds wheat flour to their honey glaze. It is now considered gluten free.
She will follow up with an e-mail to confirm. I will post when received.
