  1. I have a question about baking for others. I have always enjoyed baking and there are recipes using wheat that others like me to prepare for them. So I was wondering if I can make myself sick by using wheat products in preparing baked goods for others.

    I have been gluten free for 2 months.

    Ohooo....the thought of that just gave me shivers!! I can invision flour all over the kitchen, much less in my gluten free pans and utensils....and a week on the sofa.

    Why don't you try baking some gluten free goodies for your friends and family. After two years of not having a piece of cake, I made the Chocolate Cake from Pamela's Mix. My family has raved about it and it is the best cake I have EVER tasted. Quite proud of myself, I am. ;)

    Check out the baking section on this site. Very good stuff there.

    The November 12, 2004 entry says Log Cabin syrups contain barley and aren't gluten free. I've been using that syrup and on the label it doesn't list barley at all. What's going on here?! Don't they have to list it as an ingredient?! That's messed up. Anyone know anything about that brand? I don't mind switching syrups, but it would have been nice to know that I was eating something that was contaminated.

    The site says:

    "November 12, 2004: Aunt Jemima's syrup, Mrs. Butterworth's syrups and all Log Cabin syrups except Country Kitchen: Subscribers to our food SmartList and our food pocketguide should note that these syrups now contain barley and are NOT gluten free."

    NOTE that it later confirms that Aunt Jemima's syrups ARE gluten free.

    Thank you for posting that information. That is what this site is all about, helping each other through Celiacland.

    I would use a bit of caution upon relying on 2004 ingredient information. Products change frequently and while it's easy to rely on passed on information, the MUST rule here is to READ ALL LABELS. ;) Barley can be a hidden ingredient. And, when in doubt, call or write the company.

    As richard indicated, barley, rye, malt and oats are not reqired to be listed as an allergin. Wheat is required.

  3. I recently read that Catwalk by Tigi, the Curls Rock product line was gluten free. I went to my salon to purchase this product as I recently learned that Matrix Curl Life has wheat in it. I was surprised to see "wheat amino acid" listed as an ingredient. Does anyone know what amino acids are and if this ingredient is unsafe for someone with Celiac Disease?

    I am feeling so overwhelmed and frustrated right now. I always thought I had to be careful about just what i ate, but within the last few days realized I had to now start reading labels on everything, from hair products, to lotions, make-up and cleaning supplies. This stupid disease is so hard and I hate it.

    I keep trying to remind myself though that I could have things a lot worse, and to thank God for all the blessings I do have, and that I don't have it worse.

    Any suggestions, pointers, advice, encouragement, recipes, so yah, ANYTHING would be appreciated and beneficial to me!!!

    And yes it can be VERY overwhelming in the beginning...but it does get better. You have found a great site. Some of the best Celiac Minds are here.

    Take some time to brows around this site. There are about a ca zillion recipes and a lot of product information. I am sure that you will find it invaluable.

  4. I am sorry Lisa, but I have to disagree about the Vitamin D. As you know I live in Arizona and my D levels a year and a half ago, just barely hit the chart. Even with taking mega doses several times a week for a couple of months, I barely got in the normal range. I now have to take 1000 units a day and I am still barely in the range I am suppose to be at. But, I also don't know if the lack of D would cause a miscarriage. At my age, I am more concerned about waking up in the morning - hee, hee.

    Well, that's what my Dr. said and he knows everything. (yeah right!) :P You had a lot of things cooking back then. Glad it's in the past.

  5. Just wondering if a Vit. D level can cause a miscarriage. I know vit D has to do with calcium absorption but that's about all it.

    I think that it would highly unusual for someone living in the US (other than Alaska) to have concerns for low Vit D. General mineral and vitamin levels that are low can effect the body in many ways.

  6. If you have a double bed, buy a king size. It will not come down to the floor, but usable for a bedspread.

    I have a queen and use a king size comforter. I don't use a sham and it works well enough to cover for a bed spead.

    I don't like shams because they are only dust mops. :(

  8. How often should I call each manufacturer to double check recipes? I had called about 10 months ago and have been checking lables however I have found that in that time Mrs. Butterworths and Uncle Bens have changed their statements. <_< I also found out that Arm & Hammer Laundry Detergent and Palmolive will not guaruntee gluten free.

    I would call a company when you are not confident in reading labels or verifying natural flavors or spieces. But, again, if wheat is in an ingredient, it must be listed by law.

    Many companies put out a CYA statement - even though their product does not contain gluten. You just have to judge one product at a time.

    Always read labels.

  10. I'm fairly new to the gluten-free diet, and I was just wondering. A lot of people on here talk about contacting manufacturers for more info for everything from foods to hygene products.

    My first question is if the ingredients are listed on a package, shouldn't you be able to tell if the product has gluten or not? Like if you have a jar of peanut butter and the ingredients are peanuts and salt, would you still need to contact the people that make it? I don't really understand why. I thought wheat had to be listed on all products if it was an ingredient.

    Also, shampoos, hand lotions, etc. Does it really matter if these have gluten in them? I personally don't enjoy eating my hand lotion. I realize its a matter of contaminated something else you might eat, but how are you supposed to know if your lotion has gluten.

    You could go crazy with this stuff to the point where you only eat fresh fruits, vegetables, meats, and fish (which I would be all for, but I'd imagine it's not easy). Right now I live at home and my parents will make pasta or something and I know that it's possible that the pasta leaves residue behind, or the dish washer isn't quite thorough enough. How can anyone possibly avoid gluten completely. Do I have to move out, have a place sanitized and stay at home in a bubble with my own garden for fear that a bread crumb is floating in the air somewhere outside which I could possibly inhale? It's crazy!

    You are correct in stating that products that contain wheat must be listed by law. But, malt, rye and barley are still out there and can hide in "natural flavorings" ans spices. That is why, "when in doubt, call the company". Wheat free does not mean gluten free.

    Shampoos and lotions are up to your own discretion. Shampoo can find it's way into your mouth during a shower or running your hands through you hair. Lotions on your hands can also find its way into your mouth. Some people here are very strict about it and others not as much.

    For the most part, a good run in the dishwasher will take care of any residue from gluten. I would be very careful about a shared toaster, cutting boards and scratched non-stick pots and pans. Tha't a good place for gluten to hide.

    The diet is not as bad as it apprears at first. After a while it will become second nature to you. If you take certain precautions in the beginning, you should see a big improvement in your health.

  11. I live in the Phoenix area and a friend just told me that Los Sombreros in Scottsdale has a gluten free menu. I haven't checked it out yet but I think I am going to this weekend. I was just wondering if anyone else has been there yet and if so, how was it? Did the servers know what they were talking about? Anyways, I will give an update if we do decide to go there.

  12. My sister and I will be seeing my brother in Scottsdale in a couple of weeks. We have not been together since 1981. I will just have a few days there and I am hoping to meet up with a good friend/mouse while there.

    I noticed that they have a good selection of restaurants with gluten free menus, such as P.F's and The Capitol Grill.

    Are there any great sites to see or things to do within a hour or so from Scottsdale. Unfortunately, the Grand Canyon is too far for this trip.

    I am looking forward to the trip. I have not been to that part of the country in many many moons.

  13. I need something that is going to help me prep for an everyday kitchen. I'm kind of stuck on what to have for lunches or snacks so far. Also my son for his school lunches this year.
