  1. My blood tests showed that I was mildly positive. My endo revealed nothing significant. My biopsy results were moderate to severe damage. My main symptom was anemia -- no intestinal issues until I consumed massive amounts of gluten between tests.
  2. I have some in my big freezer right now! It is supposed to keep me from gobbling them up, but I deserve a treat after polishing all my living and dining room furniture (my Mom is coming soon!)
  3. I hope others respond. I too will be in St. Petersburg for two days as part of a port stop on a cruise ship this summer. I am hoping the ship might provide some food for me or I will have to dine on food I am bring from home. I have not even started to research yet. Your post might get me going!
  4. Hello Soon-to-be-Daddy! I can not help you with any medical advice, but I can encourage you to continue to pursue a proper diagnosis. Best of luck!
  5. Store the flours and the Xanthan gum in airtight containers and it will last you a long time!
  6. Welcome! My heart goes out to you. Hang in there! I do not have DH, but I do know that those who do on this forum, will be able to offer you great advice. In the meantime, search the forum for ideas to help you feel better. Hugs!
  7. I was anemic. I have thalassemmia (a genetic anemia) and I had iron deficiency anemia. When I took iron, my ferritin levels improved as did my hemoglobin. Once I stopped the iron supplements, my ferritin levels would drop, then my hemoglobin would drop and I would be very anemic again. I was able to absorb some iron, but not enough for me to stop taking...
  8. Check out "Find Me Gluten Free". This website shows many restaurants in your area. Read the reviews to see if people who have celiac disease or an intolerance have been there. There is an app too!
  9. Yeah, I hear you about gluten. When I was diagnosed, my only symptom at the time was anemia. Now, looking back, I had lots of health issues that could have all been related to gluten -- or maybe not? Who knows? Glad that you are able to keep your uterus. Recovering from gallbladder surgery is pretty quick! Make sure they can accommodate your gluten...
  10. Sweats, chills, body aches? That sounds like the flu. Have you been running a fever? I have had it all this past month: flu, intestinal virus and finally a cold. Six weeks of being ill! I got all three, hubby and kid only two! Lucky them! I'm finally well. Whew! I guess I had to make up for all the years that I avoided getting sick.
  11. I have uterine fibroids too. It was thought that they were causing problems with severe bleeding, but that turned out to be my anemia and thyroid. I went on HRT (bio-identical to stop the bleeding) and therefore, helped my severe anemia. But, it didn't resolve the anemia -- that's when I found out I had Celiac Disease. My GYN wanted to do surgery. I...
  12. Stomach pain (pinching, really is my first symptom I get when I have been accidentally glutened. It's where the stomach empties into the small intestine. You could actually see visually at the bottom of my rib cage swelling. The pain went away after six months or so when I initially went gluten free. My gallbladder attacks (non-functioning 0% injection...
  13. I would suggest a celiac blood panel. A formal diagnosis may help your wife stick to the diet. You have to be eating gluten to get accurate results. Go to the University of Chicago's celiac website for lots of information and the proper testing requirements. Oh, there are plenty of simple good things to eat that are gluten-free! We had salad, pot...
  14. If your doc orders the camera, than go for it! It would be cool to see the insides of your intestinal tract! You just won't get a visual on everything. Do more research so you know exactly what it can do. I am not a doctor, that is for sure. Consider a regular endoscopy now that you know you can get "knocked out" for it. You mentioned that you are...
  15. I am pretty sure you can not see candida/fungus or other micro organisms because they are even smaller than the vill. In my case was not visible on the scope, but the biopsy showed moderate to severe damage. The camera will pick up polyps, crohn's, tumors, etc. It has taken me almost a year to feel better and I was symptom free prior to my dx other...
  16. Why don't you check out the University of Chicago's celiac website? Congrats on healing! So happy for you.
  17. Welcome! If you decide to test for celiac disease, do not stop eating gluten until all testing is complete. Testing won't just help you, but your daughter as well as celiac disease runs in families. Both my husband and I are gluten free. The diet is not bad and I bake gluten-free goodies and no one can tell the difference! The best thing? Feeling...
  18. I was formally diagnosed this year. Other than anemia, I did not have any other symptoms. My husband has been gluten-free, at the suggestion of my allergist and his MD, for 13 years. That is why I was astounded when my gastro recommended an endoscopy when he did my routine colonoscopy (positive blood test). My husband knows that gluten makes him sick...
  19. No, you are not over thinking this. Different baked goods require different flour mixes to get the best results and some folks have allergies or intolerances so they might need to avoid ingredients like potato, etc. that are lumped into a flour mix. For me, it was easier and I get good results for cobblers, cakes, cookies. I have not attempted bake...
  20. I use flour blends like Pamela's too. I just convert gluten recipes over to gluten-free. I have not made yeast breads though. During this past year, I have tried to keep it simple. I just did not have the energy. Now that I do,I am catching up on home projects and sewing in my spare time.
  21. When my TSH is between a 1 or a 3 I feel fine. My t3 and t4 levels have always been in the mid-range. My antibodies are all over the place (above 300 to the 1,000) and are still high despite being gluten-free for almost a year. I worry about becoming hyper rather than hypo because my hyper symptoms are much worse (anxiety, jittery, weakness, bone loss...
  22. You might want to start a new topic. I think you will get more answers.
  23. You can use the website "Find Me Gluten Free". I always check the reviews and trust those who state they have celiac disease.
