  12. They say that it is gluten-free and it is tested, but their may be cross contamination issues and you might be super sensitive.
  13. Drive down to Tucson's gourmet Girls Gluten free located on Oracle and River (north side of town). They are open for lunch and breakfast. Great bakery too. Get the French bread. It is worth the drive to feel normal and safe! I am sure they can work around your other intolerances. Check out their website.
  14. I am impressed! I have been to so many gluten-free bakeries in several states and your goodies are much better. Most just offer cookies and overly iced cupcakes. That said, have you considered selling your recipe to a Certified gluten-free baker? Might be worth meeting with them and giving out samples. In the meantime consider selling "under the table" to friends.

I talked to large gluten-free baker in the Atlanta area who is certified and who supplies products to local grocery stores in their region.   20. Going gluten free has not affected my thyroid function. I think it has calmed down my autoimmune response, so that I'm no longer fluctuating from hypo to hyper.   22. Have you had your antibodies checked for Celiac to see if you are improving (healing)? Sounds like you are not absorbing iron or getting enough. I took iron daily for almost a year. My ferritin levels were a 2 and are now over 45.
  23. Probiotics bad? No, but you may be intolerant to them if they are, say, for example, milk based and you can not tolerate milk. What are the foods you can not live without? Start from that list. "What? I could never give up nuts or avocados! They are so heathy for you and I love them!" See what I mean? It is not always the standard intolerances...
  24. Most cooks will throw in a little flour to thicken their enchilada sauce. Plus, if you are going to a "gringo" place, they often put wheat flour in their corn tortillas to make them soft. Chips are often fried with chimichangas (fried burritos) so be wary of CC. Ask a lot of questions to make sure!
