  5. Keep pushing for the Celiac Blood Panel. I agree, your doctor is not up-to-snuff on diagnosing celiac disease. My husband has not had a single sinus infection since going gluten-free twelve years ago! No snoring either (except when he's been accidentally exposed to gluten). Best of luck to you!

  13. Making it the old-fashioned way is way better! Everyone loves the taste of our popcorn! It's cheaper too. No need for an air popper. Just pop it on the stove with a little bit of oil. Keep it moving and shake it. Like the microwave popcorn, you have to listen to for the popping to slow down.
  14. I've used it for years to make pudding (whole or pre-cooked). As kids we didn't even let the pudding cool down completely to eat. I used it just this week as a thickener for my apple cobbler. It helps solidify the filling for pies. Now being gluten-free, it's another "piece" of the flour blends used for baking.

  19. Rice flour is good, but if you only use it, you'll get "gritty" baked goods. Blends are best and there are different blends for different baked goods.
