Hormones shifting. My periods at the end of perimenopause were so long and heavy that I became super anemic. I had a few fibroids (no pain) but I refused surgery and opted for Hormone Replacement Therapy. Bi-estrogen and progesterone both helped. Used bio-identical from a compounding pharmacy. Most frozen/commercial gluten-free bread needs to be toasted. That's the only way we'll eat it in our house if we haven't baked it ourselves (made only one loaf so far). We prefer to use lettuce wraps. We carry a cheap toaster around everywhere. -

Yes. They are as long as you don't have a intolerance to them (some people do). Biggest thing is to get to that bag of chips before those "gluten eating" folks do. Went through perimenopause for 12 years! I have been period free for the past six months. That's when the hot flashes started. During years 10 and 11 I had wacko period cycles and heavy bleeding (my thyroid was acting up during this time). Yes, being low in iron will make you feel like crap! When I was super anemic, I was out of breath all the time and had to take lots of breaks. That was bad, but feeling "not quite right" is pretty awful too. Just because you are borderline or just within the range doesn't mean that your symptoms will dissipate. -

I asked my GI about a dietician and he didn't recommend one. Said that he used to refer patients but typically they'd know more than the dietician. It was okay for me since my husband has been gluten-free for over a decade, but what about new patients who haven't a clue? My heart goes out to them. -

I'm still new to celiac disease and I've made lots of cookies, cakes and muffins that don't require yeast over the past 12 years (hubby is gluten-free longer). Plan on trying it someday, but the frozen bread is good enough for my hubby and I don't even crave sandwiches (prefer lettuce wraps). I'm hoping some of the bakers will come forward to help you. -

You can also make a white sauce (milk (or sub) butter and cornstartch) and add chopped mushrooms for a quick sauce. It freezes just fine too. Add salt and pepper too. Takes about 10 minutes. Skip the mushrooms and add cheese. The options are endless to a basic white sauce. -

I haven't tried the brownie mix, but I have used the cake and the chocolate chip cookie mix and they are both good (especially when you are away from home. Beats any "store bought" gluten-free cookie or cake. My entire family gobbled down those cookies and they aren't on a gluten-free diet. -

I'd call in for the results. What exactly did they test for? A low hemoglobin is the definition of anemia. I have two different kinds.
