  1. Yay! I love camping!! I bring my labrador always. Honestly camping gluten free is not any harder than regular camping. Have fun planning the menu! hehe.. you could do some doughnuts or something in the car! ;)

  3. Request a copy of your results. But chances are your Celiac Panel being "negative" is good. The doctor that diagnosed me used a "Celiac Panel" and since I've gone gluten free my numbers have gone down but are not considered in the normal range yet. Chances are you may be in the subclinical range and that is why they said negative. But get a copy of your results...

  9. I think gluten free girl and the chef use psyllium husk in place of xantham gum with good success. I may be wrong about that though.
  10. Shredded zucchini or julienned zucchini makes wonderful spaghetti noodles! I do this all the time just because of the calorie forgiveness. Spinach has always given me D (before my whole CD nightmare, too) so I avoid it.

  12. Yes--- I mentioned that my specialist said I may have microscopic colitis. It was something we are to investigate further if my symptoms do not resolve with just the 6 months of gluten free.   14. How many biopsies did he take? Sometimes the damage to the villi can be patchy and if only one or two biopsies are taken then it can miss the damage. Were you eating gluten prior to your biopsy? If you were gluten free that can also affect your results.   16. hahaha fair enough! I am pretty blunt and up front about my GI issues so I don't use the lock feature. I am sure that I'm not everyone's favorite party guest for that reason. LOL

  18. I found that I have a scalp sensitivity to wheat and use a gluten free shampoo and conditioner. Since I switched my itchy, flaky scalp has minimized drastically.
