  1. Welcome to the board. I wanted to add to what the others had said about eating meat. A vegetarian diet just doesn't work for some people. I felt very sickly on it. If you are looking for healthy meats try eating buffalo, wild fish like salmon, free range chicken and Maverik Ranch pork and beef. Also take a look at your diet and...
  2. Thanks Nancy, You are right. It does seem magical. And so "unbelievable" that a simple diet change could enable me to walk normally again. Geesh !! I can hardly wait to go to the local art festival this year.
  3. thanks folks, I really enjoy being a member of this board, but one of the reasons I started this thread was because I am soooo confused .... I am still hung up on that Chronic Fatigue syndrome diagnosis from 1992. I am on disability for CFS/FM. My diagnosis is (was ??) air tight. I honestly just can't believe celiac is the answer...
  4. I eat Back to Nature Sesame Ginger rice crackers and Kettle baked slightly salted potato chips (yellow bag). Publix carries the crackers and occasionally has the chips. I am working on getting my Publix to carry them all the time. That's it for me as far as main steam. Marcia
  5. I use a lot of healthy oils in my foods to avoid constipation. I found it works best if you add it to your foods after they are cooked. I had severe "D" with magnesium so be careful and try just a little at a time. I can't take it at all. Marcia
  6. Definitely hang in there with the diet. I was still feeling crappy at 6 months. Even 9 months. I am 51. Have you done a gluten challenge to see if it has any effect ? A lot of us do this, me included, to convince ourselves that this diet is worthwhile. I didn't see any reference to iron levels, so I thought I would add that to your to...
  7. Carrie Congratulations and oh, be sure to stay on the diet Great news !!!
  8. I am not allergic to all grains, but I had to answer anyway. It is entirely possible that you will be able to re-introduce rice, potatoes, etc at a later date and just need to take emergency precautions at this time. I was down to about 5 foods when I started this, but now there are plenty of foods I can eat. BTW, your taste buds will change once...
  9. WOW !! If this board wasn't here, I would still be very sick. I have learned everything I know about gluten free eating here. The emphasis on sticking to the diet and watching out for cross contamination has really kept me from getting too discouraged. thanks ... marcia
  10. Loraleena, Thanks, but sorry to hear that your fibro is back. That is the kind of thing I am worried about. My fibro only comes back now if I am not sleeping good. How long were you pain free ? Marcia
  11. Happy Birthday and Happy Anniversary. 60 years is quite an accomplishment. Thank you so much for sharing your story. It is a good reminder for us all. Marcia
  12. Laura, Thanks and congratulations to you to. I am happy to be a member of the "feeling better" crowd.
  13. What do ya'll think about using Halloween to inform people about celiac ? We could really have some fun with this.
  14. I didn't have any luck with any of the supplements, so I ate papaya, mango and pineapple every day in the beginning. These are what a lot of digestive enzymes are made from. They taste pretty good too. Marcia
  15. Thanks folks, Ya'll have given me reason to believe that my mobility issues are behind me. I guess, this is just going to take time before I adjust to the new me.
  16. Sorry to hear you are leaving. And I look forward to seeing you here again. You are always so funny. Marcia
  17. AW !! You guys are making me cry !! I can walk through the mall now too. I can only dream about running again. I had no idea you had been through this too.
  18. I don't know if this will help, but I used flax meal and did not use cheese and mine came out rubbery. BLEH !! Marcia
  19. Thanks Patti, I sure hope this lasts. I've had remissions over the years, but I have never been off all meds and felt this strong. I wonder how many others here have had similar experiences. Marcia Thanks Raven - The more success stories I hear the better I feel about all of this. Thanks nooner - pretty cool, huh...
  20. Isn't this cool ?? I'm so afraid it is not going to last though. Thanks Carla, I went "everything" free all at once because my digestion was so bad. But, I am still thinking this is all celiac. Nancy, I am so glad you got over your mobility issues too. Can you beleive this ? Marcia
  21. Well. A brick hit me this week. After 16 and 1/2 years of being completely disabled - As of September 4th, I apparently don't need a motorized cart to go grocery shopping anymore. My legs are fine and I don't even get winded anymore. And as of September 6th, I can sleep about 9 hours a nite all on my own without any meds. What do...
  22. You can try taking some B12 for the tingling and numbness. Celiacs are typically nutritionally deprived. Use the sublingual or injections though since they will work quicker. Welcome to the board Marcia
  23. I used to be able to eat eggs every three days, but not anymore. They give me horrible gas and bloating immediately now. I can have them in a cake or something though. Marcia
  24. Just wanted to mention that a good deal of my food intolerances have subsided in the last 4 months. I still can't have soy, dairy, corn, eggs, or gluten, but I have added back in tomatoes, garlic, leeks, onions, chocolate and just 3 days ago I ate an orange. Also, at one point I was having oral allergies to cantaloupe and that is gone now too. And...
  25. I'm feeling obsessed with food reactions nowadays. I don't understand it yet, but I am finding that I only have brain fog if I eat too many grains or other foods high in carbs first thing in the morning. If I wait till after lunch or later, they don't bother me as much and sometimes not at all. Late at night, before bed, I don't feel it at all. ...
