ARCHIVED One Of My Favorite Foods
marciab replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
What would you use instead of eggs ? Flax meal and water ? Will it stick ? Or could you just roll it in honey ? And how much honey and ginger would you use ? I've never cooked with either. -

ARCHIVED Does Anyone Have A Millet Tortilla Shell Recipe ?
marciab replied to marciab's topic in Gluten-Free Recipes & Cooking Tips
Well, the fried millet tortillas were yummy. Thanks for your help ... My batter did not stick together well though, so I had to leave them 1/4 inch thick. I'm thinking it needs another ingredient to help bind it. Maybe corn binds together better than millet. And as for the baked tortilla shell, it is now in the freezer waiting to... -

I'm new to this too, but I ate out every day for about 6 weeks a month ago. It was very embarrassing at first, but you'll get the hang of it. Just to keep yourself safe, I would recommend going to a restaurant with a gluten free menu. Chili's, Carrabas, Outback is all I can remember right now. I ate at Cracker Barrell, Picaddilly and Red Lobster...

ARCHIVED Stool Softener
marciab replied to PeaceAngel22's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
For fast relief, as in 5 - 10 minutes, I use a suppository. Fleece makes a good one. And I know Walmart has it. Enemas were painful for me, but suppositories weren't. And no worries about cramping. -

I've been eating baked chicken lately ... I discovered those plastic bags you can cook in I buy the hormone free, free range chickens at publix .. I think several of us here digest those best ... I take a pre cooked grain (buckwheat, quinoa, millet - I keep these ready in the freeze) and add cinamon, chopped apple, flax seed oil, honey, raw pumpkin seeds, raw sunflower seeds and hemp seeds. yum ... I like this topped with lentil sprouts or mung bean sprouts too. And I make stir frys all time. I use the above gluten-free grains or brown rice...

I feel for you .. The food list I could digest was pathetic too. I'm 5'5" and I was down to 105 when I finally got things going the right way. I could not handle ensure at all. Not even if I cut it in half with water. But, you might want to try it. And I could not digest any vitamins at first. I am experimenting with Poly Vi Sol infant vitamins...

ARCHIVED Does Anyone Have A Good And Healthy Bread Recipe?
marciab replied to skinnyminny's topic in Gluten-Free Recipes & Cooking Tips
I'm hypoglycemic, so I came up with this. It is loaded with protein. I used to eat the 11 grain bread before going on this diet, so that is what I was trying to do. I'm not one to spend a lot of time perfecting a recipe, but I made this and loved the taste. If you find a way to get this to rise, I'd be very interested 1 cup chick peas (ground... -

marciab replied to Mia H's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I was diagnosed with CFS/FM back in 1990 and I have gotten rid of several of my symptoms too. Pretty cool, isn't it ?? I'm still working on the fatigue, but I was glutened (CC) from eating out from Sept till the first of Nov.. But, about the FM, I find that losing sleep will cause my fibro to hurt every time. And your husband is not going... -

Sorry, I just found this ... I could not walk any distance without feeling like my legs were heavy. If I pushed myself and walked anyway, they got heavier and heavier. Eventually my right foot would start to drag. I used a motorized cart most of the time when I went grocery shopping. I actually owned one back in 1993 - 1998, because I was sooooo... -
ARCHIVED The Healing Process...
marciab replied to MauriceGreene's topic in Coping with Celiac Disease
I am still more tired than I feel is normal for my age and I have been on this diet since September 2005. However, I felt completely healthy for 2 weeks in October. So, I know it can happen. I have not had the urge to sleep. But, before going gluten free I went wheat free and discovered it was making me sleepy ... Have you looked at other... -
You really have to chew these down to nothing. I was / am guilty of not chewing my food completely so I had to learn how to eat slowly. Saliva is your body's natural digestive enzyme and is the first step in the digestive process, so it is important to start here. This is why they tell you not to drink when you eat. Raw seeds and nuts are loaded...

Celiac disease flattens the villi in your small intestines thus causing a variety of digestive symptoms. If this heals properly (it normally does), you will start to digest foods again. I had to eliminate soy, dairy, eggs and corn to get my digestive problems under control, but not everyone does. You can still be intolerant or allergic to the...

ARCHIVED Having Celiac And Other Intolerances
marciab replied to angel42's topic in Food Intolerance & Leaky Gut
Common sensitivities are wheat, corn, dairy, soy and eggs. It is because they are found in abundance in our foods. It is actually easier in my opinion to eat fresh veggies, fruit and meat. It requires cooking, but at least you know what you are getting. And figuring out your intolerances is a lot easier. Marcia -
I had trouble digesting nuts when I first started eating them. But, I eat about 4 oz a day of a mix of raw hazelnuts, almonds, pecans, cashews, walnuts, brazil nuts and macadamia and I am fine with it. The cooked ones are still too harsh for me, but I can eat the raw. I actually got sores on my tongue from walnuts in the beginning, but I don't anymore...
