I've heard that *some* people with a rice sensitivity will cross react with sorgum, but not everyone. So, there's a chance sorgum will be out for you. Montina, being a wild-rice based flour, probably will *not* be a problem, as wild rices aren't true rices at all, but a grass. -

actually, if you search pubmed, you'll find a number of studies supporting the theory that the 33-mer that triggers the autoimmune response DOES go through breastmilk. quite a surprising number of studies for something supposedly without research. I posted links to a bunch of them nearly a year ago. this definitely is not a new area of research. -

dutch process coco powder should be fine, but always read the label. adding malt to dp coco would be ... unthinkable! (you'd ruin so many things you might make with that coco...) but you can't take anything for granted. -

yep - google gluten free sourdough starter and you'll probably find a few hits. the millet/soy bread was probably bitter from the quantity of soy and then the millet, if that's all it had in it. soy, particularly soy flour and yogurt, can have a little bit of a bitter taste, depending on your tastebuds. millet doesn't help. unless there's a lot of... -

I don't see where the dairy is. The "sour dough" ingredient left me perplexed... Did you mean sour dough starter? If so, there's no dairy in it - it's yeast and flour left out for two weeks or so to ferment. -

You didn't know, so please don't feel guilty. I would also encourage you not to be his parent when it comes to food. If he's asking you what he can and can't have, and always relying on you for that, he won't be able to manage the diet on his own if he ever needs to (business trip, illness, etc.) Rather, do it together. -
I'm going to quibble with your 1600-1700 number. If I'm not fairly active, 1700 calories a day will have me putting on weight, albeit slowly and 1600 is only just under my maintenance.
