The ability to produce large quantities of lactase declines with age for all populations, for some more quickly than others, depending on genetics. Eventually it gets low enough that you feel the effects of undigested lactose being digested by bacteria in the intestines. Aging itself is a cause of lactose intolerance. -

I am also a fan of whole grain amaranth. I've used it in combination with beans and sausage and canned tomatoes to make a creamy sort of dish that was quite tasty. I haven't tried the boxed snacks. -
It doesn't have to be a situation that has gone away to retrain. You assume that the pain stems from an unhealthy relationship in the past, which is untrue. Cold air, and dry air, are both known triggers for asthma attacks. You should absolutely wear a scarf around your mouth and nose, and make sure to inhale through your nose - it both warms and moistens the air. Also, are you on maintenance meds for your asthma? That may be important through winter, unfortunately. -

Your basal metabolic rate depends on your age, height, and weight, not to mention your genetics. You can find a number of online calculators to estimate your BMR using a variety of different estimations (Google will get you a number). I did a hard-core elimination diet, eating only a dozen foods for a week, then adding one in at a time. You can also go the opposite route, eliminating one food for a week or two, then adding it back in to test it. We have a Zojurushi rice cooker. Not small, but it does have a handle for carrying. It's also pricey. I wouldn't ordinarily get a 3 figure rice cooker, yes, I know , but my husband wanted to know he'd always have perfect rice no matter what he did. And, yeah, you always get perfect rice, pretty much no matter what. No scorched or extra toasty stuff... -
It's just me and my husband, but I dont' 'require' all gluten to be out of the house, I just won't cook it. If he wants some, he can have it; he just has to make it himself. Your husband and kids can do the same.

I make mine with rice (part short grain brown, part wild rice blend, part risotto) and everything else pretty much the same (onions, mushrooms, carrots, spices). You can also make it just like any other stuffing, from 'scratch', using gluten-free bread. -
Even if your allergy test was negative, you might be intolerant to casein. if lactaid isn't making a difference, that could be the problem.

Seattle has a number of places with gluten-free specific menus, including bakeries. Los Anglese (and the whole surrounding area) had a fair number of options as well.
