  1. Anger's pretty normal in the grieving process. I'm more angry at the lack of options - sort of a "why is everyone so limited" sort of thing, which I never thought previous to this, of course - than the disease itself, but it's almost one in the same, really.
  2. unless you think of pancakes as baking, I would suggest muffins - flavorful ones - or quick breads. and realize that baking has its quirks - even if it wasn't gluten-free, it may not go perfectly.
  3. hahaha! you say that the day I'm making cookies with 1 cup of margerine (to 3.5 cups flour). I want to decorate them, but probably won't eat more than two or three! ;-) there's so many varieities of hummus, unless you detest garbanzo beans, I'll bet you can find one you like. :-)

I have never had any popups on this forum, but I am currently running Mozilla, and it does a fairly good job blocking popups...
  5. For those struggling with shared kitchens, the modifications of the diet, and the social interactions after taking it up, I thought I'd share how even the experienced find it to be overwhelming sometimes. I feel pretty comfortable with the gluten free diet - I've been gluten-free for nearly two and a half years, excluding a couple bits of testing at the...
  6. I'm a big dip person as well - works great with a load of fresh, raw veggies - spicy garlic hummus, black bean dip with sundried tomatoes, and raw ranch dressing are my favorites. Sauteed mushrooms are also good. :-)
  7. Tamari is like soy sauce, but is processed differently. Kinda like cream cheese versus cottage cheese. Not all tamari's are wheat free, but San-J and Eden (I think) make gluten free tamari's. Pretty much all soy sauces, except La Choy, have wheat, as it is part of the production process.
  8. When in doubt, I've found "steamed shrimp with vegetables, *nothing* added, *totally plain*" to be generally effective at chinese restaurants.
  9. Yep, calcium is constipating, particularly in large quantities. She may want to try magnesium on it's own, without any added calcium. If she's not having symptoms, and not having hard stools, she may not have a problem. Much would depend on her diet - if she's eating low-residue foods (things with little fiber, lots of meat, etc.), she wouldn't produce...
  10. Magnesium can help this problem - particularly if she takes calcium supplements. She should start with a small amount of magnesium (though recommendations are for 2:1 calcium:magnesium), and work up until she sees an effect.
  11. I think the answer to the "how" question depends on you - some people have different methods that work for them, while some methods mail fail horribly. For me, I'd probably just think about the next week - nothing further than that. Just trying to get past the physical symptoms (which linger for me, for at least a week), and then worry about regrouping...
  12. hahahaha! italian and french wines have - in many cases - stricter restrictions than US wines. sulfites aren't an additive, they are naturally a part of the grapes and processing, though organic wines are apparently MUCH lower in sulfites, if those bother you. in general, no, wines aren't a problem. I might avoid cheap wines, worrying about fillers, but...
  13. I did something like this (but it was a homestay, not an exchange program) when I was 10. I stayed in Chanteny-St. Imbert for a month in the summer. It was a FABULOUS experience! We also hosted a number of students (older, and with varying levels of success) from a number of countries (Japan, Thailand, Spain, France). It can be a very rewarding thing...
  14. That letter does not mean that you can't contact him for a referral. It certain is a vague letter, and there could be *much* more behind the scenes, but I would try to get contact information on him just so you can try to get a recommendation for another doctor from him.
  15. gotta ditto you on that one. you try to respond once a day (so you're not surfing at work), and it takes WAY longer to respond to posts. definitely is dropping my response rate!
  16. There have been studies that suggest that undiagnosed celiacs may try to self-medicate by smoking. Something in it seems to reduce their symptoms (if not the damage). I don't think the articles I read on it suggested the mechanism (or if they did, I have forgotten) but you are not completely out of the ordinary to feel there's a link for you. That doesn...
  17. I would be skeptical of her trying to sell stuff from her own facility. There's the appearance of a conflict of interest there, and a really good doctor would avoid that. I'm not saying to give her up yet if you've been otherwise fairly happy with her treatment, but keep aware, and continue to be your own advocate. See how she responds when you say no...
  18. Talk to them about the evidence. Let them know that you KNOW they don't want him to be sick, and you KNOW that they're doing the best they can, so you are JUST as stumped as they are. But since you have to deal with the aftermath of the glutening, you want to work with them to figure out where it's coming from. Assume (or at least make them believe that...
  19. Using a wheat based glue as an adhesive for filter bags (be it tea or coffee) simply doesn't make any sense, because the wheat starch would dissolve in the water when it was brewed. It's something of a celiac urban legend that filterbags for beverages (tea, primarily) have gluten in them.
  20. I'm sorry you had such trouble. I'm lucky that my family doesn't mind me doing the cooking for holiday meals (and I enjoy doing it), regardless of who's house we're at. In situations like that, where you can't keep an eye on the cooking, I HIGHLY recommend you bringing something. If you just say that you'd love to try their food, but simply can't take...
  21. i have not experienced this symptom upon going gluten-free; I've always had 115/75 give or take 5 points.
  22. If it's got barley grass, don't have it. "Not enough to cause a reaction" is a ridiculous statement, really, and demonstrates that they don't understand the issue. Maybe if they had said "tests below 20ppm", but even then it's a personal decision. gluten-free protein drinks? The Naked Juice and Odwalla ones based on soy protein are usually gluten-free...
  23. Don't put out a full plate of brownies, or a full carton of ice cream. Portion control seems to be the issue here, and he may find that if he eats small portions that are small, without the thought that he has a limited number of portions, he's better able to self-regulate. So, cut the brownies small, put them all up except for one that he gets. If he...
  24. Just because she doesn't have those genes doesn't mean that you don't have at least one of them. You both got your genes from your parents, but you certainly don't have all the same ones. That being said - not all of the genes that contribute to celiac disease have been identified. A small percentage (1-2%, as I recall) of biopsy proven celiacs do not...
  25. if it's bothering your breathing, please call the doctor back and try to bump up the emergency. not going for three or four days isn't necessarily a problem, particularly if you're eating very low-residue foods (no fiber, mostly meat, etc.), but if it's causing additional problems, you're starting to get into the "should seek immediate attention" area. ...
