ARCHIVED I'm Not Convinced Celiac Is My Problem?
gabby replied to vbecton's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi, I had a heck of a time with vitamin supplements when I first went gluten-free. Maybe check out your brands and call the manufacturer to get the scoop on the source of the ingredients. I also had mega trouble with soy and dairy products.....and had to eliminate vitamin supplements that contained these things too. Other things to consider: -cross... -
ARCHIVED Before Diagnosis
gabby replied to Kaycee's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Count me in as someone who had never even heard of Celiac disease. After decades of being sick and nobody being able to figure out what was wrong with me, I was in the hospital for a battery of unrelated tests and a doctor discovered the celiac by accident. Sort of like: by the way, you know you have celiac disease. I believe it saved my life. -
ARCHIVED Potential Link Btwn Celiac Disease And Cognitive Decline
gabby posted a topic in Publications & Publicity
Not sure if this has been posted here yet, but I came across this article about the Mayo Clinic saying there is a link between celiac disease and cognitive decline: Open Original Shared Link -
ARCHIVED How Do You Resist The Temptation?
gabby replied to jamrock's topic in Coping with Celiac Disease
Hi, Resisting gluten-laden foods is no different than resisting anything else (like cigarettes, etc). I use the old 'out of sight, out of mind' technique. Get the fruitcake out of sight, immediately. Either wrap it in a paper bag and put in a drawer, or immediately give it to someone or even throw it in the garbage and mush it up so you can't be tempted... -
ARCHIVED I've Been Asked To Write An Article
gabby replied to Nantzie's topic in Coping with Celiac Disease
Hi, I'm a writer. It sounds like they want you to write an article about your personal experience with celiac disease. Unless you are a celiac disease researcher or you are a doctor, your readers will not expect too much medical information. Just add one or two sentences that says celiac disease is an auto-immune disorder that is much misunderstood, etc... -
Does the meat counter have fresh beef/pork/chicken sitting next to things like raw meat in bbq sauces, or chicken cutlets dredged in breadcrumbs? I've noticed lots of meat counters have these things sitting side by side, and have watched the butcher take out a piece of breaded chicken and drop the bread crumbs all over the rest of the fresh meat. Or I've...

Since going gluten-free a few years ago, I've noticed some foods make me itch for no particular reason. If I eat onions, or anything that had an onion next to it, I start to itch in about 2 hours and the next morning my muscles will hurt for a few hours. Red and yellow bell peppers do the same to me. Is it possible some 'innocent' food is doing the...

ARCHIVED Family Making Fun Of Us !
gabby replied to Mamato2boys's topic in Coping with Celiac Disease
These things you are enocountering sound like celiac-slurs to me (much like racial or religious slurs) which are never funny and are never done in any other vein except to cause ridicule and shame. I don't respond to any kind of slurs in a humorous way. Here's my suggestion on how to deal with your SILs. Tell them: If a 'hippie' refers to a mom... -
ARCHIVED Need Opinions--i'm Going Crazy!
gabby replied to spunky's topic in Coping with Celiac Disease
Sometimes you can't find the source of the gluten....you can only have very strong suspicions. It does sound like there was a cross contamination issue at your friend's house. Possible culprits: -using a can opener on the green beans that was used to open some gluten-containing food -adding pre-mixed spice mixtures -the cook eating a piece of bread... -
There's some interesting new research going on regarding migraine headaches and something called channelopathies. Look up channelopathies at wikipedia (Open Original Shared Link) and scroll down to the migraine section. Channelopathies are gated channel ion disorders. The key is to figure out which channelopathy you may have (this is new stuff and...

If you can afford the Enterolab tests, I would recommend getting the whole food panel test done. It will immediately pinpoint if you are sensitive to thiings like dairy, soy, corn, etc. Plus it will give you info on how you react to gluten (are you highly sensitive or allergic) and will give you important info on what genes you carry. Also, it will tell...

ARCHIVED Do You Want A Cigarette...
gabby replied to Compassion's topic in Coping with Celiac Disease
That is the most fantastic thing I've ever heard. It makes perfect sense, and your boss is right. I don't smoke, and if someone offered me a cigarette...even if it was a cigarette convention and everyone else was doing it, I would not smoke. And I'm not allergic to smoking, nor do I have a disease that prevents me from smoking. i just don't do it. As... -
I used to get something similar happening...turned out to be my blood sugar spiking up. After many blood sugar tests and visits to all sorts of doctors, what we learned is that my blood sugar levels are fine (meaning they never go too high) but the problem was that when I ate, the blood sugar didn't rise slowly. Instead it spiked quickly, usually as I was...

Here's my 2 cents. Don't ASK the boss if it is okay to not pitch in to pay for lunch. TELL him/her that you won't be pitching in since you cannot eat the food being purchased, but that at no cost to the company, you'll be bringing your own lunch and that you're very understanding about the company not having to pay for your special needs and that...

ARCHIVED Anyone Have Any Tips On How To 'trace' Gluten?
gabby replied to chick2ba's topic in Coping with Celiac Disease
Hi, Here's what I do when I'm trying to track down some elusive bit of gluten. I only go to these lengths when something is making me sick and I need to turn into Sherlock Holmes to dig up the possible culprits. I call the manufacturer and ask these 4 very specific questions. The answers will tell you everything you want to know. 1. Once you... -
ARCHIVED Olive Oil
gabby replied to majicbunnies's topic in Gluten-Free Foods, Products, Shopping & Medications
There is a new oil that contains wheat germ. It is a product called OLYS and is made by Carapelli (also makers of olive oil). It is easy to avoid this product because there is a big picture of wheat on the label and it clearly says that it is made from cereals. However, it is worth asking at restaurants or at other people's homes if they are using this... -

ARCHIVED What Happens When You Get 'glutened?
gabby replied to danikali's topic in Coping with Celiac Disease
I noticed in your signature that you have interstitial cystitis. I feel for you. I had it for years and years and had every test known to man and tried lots of treatments. But it kept coming back. I'm telling you this because I finally related it to gluten. If I have gluten....even a teeny weeny bit, I get sick with stomach and intestinal problems immediately... -
ARCHIVED Sluggishness After Glutening?
gabby replied to LonelyWolf307's topic in Coping with Celiac Disease
Use a dust mask when baking! Sounds crazy, but it works. just go down to the hardware store and grab a package of those white masks that have a metal part that pinches over the bridge of your nose. They are usually in the wood/saws or paint section. Put one on before you do any baking, and DON"T TAKE IT OFF until you have finished cleaning everything... -
ARCHIVED Having Friends Over For Dinner....
gabby replied to wolfie's topic in Coping with Celiac Disease
I have found that telling people to bring nothing makes them feel uncomfortable because they feel like they are coming empty-handed. often, just to be kind, they will bring 'something' which usually ends up being something sweet llike cake, cookies, etc. Here's what I have found works like a charm: ask them to bring something very very specific. For... -
Here are a couple more ideas: -pop some popcorn the old-fashioned way using a pot with a lid. Just pour enough oil into the pot to cover the bottom (sunflower oil is good, but I use olive oil) -add enough popcorn to just cover the bottom of the pot -put the pot on MEDIUM heat and wait until you hear the first kernels pop (usually about 3 minutes) ...

Dips and spreads are a great solution for what you're going through. They have helped me a lot when I have not felt like eating. If you can get your hands on an electric food chopper, there are tons of simple simple recipes that you can make that are nutritious, delicious, densly packed with taste and vitamins, and keep well in the fridge. I'm not...

ARCHIVED Replacing Cooking Items
gabby replied to Isabella's topic in Gluten-Free Recipes & Cooking Tips
I have the cuisinart toaster oven and yes, you can roast a chicken in there. The chicken needs to go on the bottom rack, and I have found that it needs to be under 4 pounds to fit. Here's a neat trick i do to make sure it fits and cooks nicely: Take a strong pair of kitchen scissors and cut out the backbone of the chicken. then flatten out the chicken... -
ARCHIVED Cross Contamination Question
gabby replied to rutland's topic in Coping with Celiac Disease
I will pass on some excellent advice I received. In order to be a successful celiac, you need to be able to say NO with conviction, and with confidence. Even with a smile sometimes, and with a steely determination when required. this will be the most helpful tool you can take with you on your life journey. Try it out: question: Can't you just... -
ARCHIVED Gimme The Lowdown On Stevia
gabby replied to mythreesuns's topic in Gluten-Free Foods, Products, Shopping & Medications
Stevia is part of the ragweed family, and needs to be used with caution by people who have ragweed allergies. The brand we used to use (can't remember which) had this printed on the bottle. We don't use it anymore because my DH sneezes up a storm whenever he is exposed to stevia. It is a pity though, because he really liked it as an alternative to sugar...
