Kelly & Mom....your daughter is going to be a hit! I've been to bakeries run by parents of children with celiac (and they are really nice people), but there's nothing like food prepared by a person who has celiac disease. Definitely run this by a doctor. High blood pressure and high blood sugar can cause you to feel overheated like that. Hope this isn't the case for you, but worth getting it checked just to make sure. Best of luck.

I have sort of similar problems with big stores that have lights waaaaay up high.....and don't have lots of natural light. Never really figured it out, but I read somewhere that fluorescent lighting coupled with bad air circulation can affect sensitive people in all sorts of weird ways. Your troubles may not all be caused by gluten. There is a syndrome out there called Multiple Chemical Sensitivity Disorder (MCS). I've had too many experiences where they forgot to make the special meal for me, leaving me with no food. Or thought I had ordered vegetarian or kosher. Again leaving me with no food. Or they plop a wheat-filled bun on your tray next to your food. You can try to go ahead and order the gluten free meal and see what happens...but also bring your own... -
I read somewhere that having too little amounts of acid in your stomach can contribute to poor digestion. They call this problem: hypochlorhydria. I seem to remember a couple months back something about a recall on peppercorns. Can't remember the details exactly, but it should still be in the FDA Recall database...just go to this link and have a read through the recalls to see if anything comes up for you. Or do a search on their site for peppercorns. It is a good place to check regularly for recalls...
