  1. I am somewhat confused. What do you mean when you say she is 'spitting up'? Because really, that is the terminology used only for babies spitting up their milk, which is normal unless it is excessive. I have never heard of a six year old child spitting up before, and it doesn't make sense to me. Is she vomiting? Is bile rising up in her throat, and she...
  2. I hope the potato chips are plain ones. I've read from a potato chip manufacturer that they use gluten to stick the spices onto the other chips (and because it is not an official ingredient, they don't have to declare the gluten as an ingredient). You would do well to buy some light buckwheat flour as well. I bake cookies with buckwheat flour, and also...
  3. Coffee will give me a stomach ache (and I haven't had gluten in two and a quarter years), and it makes me really tired. So, obviously, I don't drink it. Most people have it to wake them up! I wished there was something that would wake me up when I need it.
  4. You are right in saying that you can't enforce your daughter's cooperation in being gluten-free. She needs to agree and voluntarily refrain from eating gluten foods. That was so hard with my youngest daughter. I saw evidence of her having reactions to gluten every day. But she vehemently denied that there was a problem, and refused to try the gluten-free...
  5. You are quite welcome! I'm glad that I scared you enough with the truth to get back onto the diet. Often the truth is scarier than fiction.
  6. I am glad you will be going back to eating gluten-free. Otherwise, you'd have some nasty little surprises eventually. Maybe not for ten years, possibly even twenty. But then suddenly your gallbladder needs to come out. Then your thyroid stops functioning, your adrenal glands don't want to put out the cortisol any more, you stop absorbing iron and become...
  7. Oh, of course! My brain wasn't working there. Thanks for clarifying that.
  8. A GI is a gastroenterologist (no clue why they shorten it to GI instead of GE). Your son's reaction to reintroducing gluten is so extreme that you can't possibly go through with keeping him on it just for tests that will be false negatives anyway by now. Call the doctor and tell him what happened, and cancel the tests. He might just diagnose him with...
  9. There is a definite possibility of him being gluten intolerant as well. He may have the same problem I used to have, the less I ate, the more I gained. Most doctors don't understand that unexplained weight gain can also be a sign of malnourishment! Also, gluten intolerance and eating gluteny carbs can CAUSE insulin resistance I believe. The best thing...
  10. Light buckwheat flour is NOT gritty (the whole buckwheat flour on the other hand is, and I don't like it at all). I have made many crumb crusts with light buckwheat flour, and everybody likes them. You don't have to use oats at all.
  11. Patti, in that case, omit the oats, and just use the buckwheat flour! I think I reacted to the oats, and will use a mixture of buckwheat flour, ground almonds and ground hazelnuts next time for my crumbs myself. My daughter (who lives in Ottawa) was able to get buckwheat flakes in a bulk food store (Bulk Barn) once, and used it instead of oats, and said...
  12. Because you have drained gluten pasta with it. It has too many small crevices, that aren't possible to clean properly, even if you try scrubbing it by hand. And those crevices will NOT get completely clean in the dishwasher. Gluten is just too sticky. I have been glutened by my colander before replacing it, and others here have had the same problem. ...
  13. The sippy cups should be just fine. The same goes for your towels and cloths. Wash them a couple of times on hot before using them again, that should do it. Unless the spatulas are old and scratched up they should be fine to use. On the other hand, you absolutely cannot use your old plastic colander any more and need to replace it, the same goes for your...
  14. I agree with the previous poster. After being gluten-free for a month you will likely end up with a false negative. It is pathetic how many GIs (who are supposed to be the specialists) haven't got a clue about celiac disease!
  15. I made apple crisp the other day and just replaced the flour it called for with light buckwheat flour. Everybody loved it, even the people who are not gluten-free, it was gone in a flash. It is a Mennonite recipe (out of my Mennonite cook book). Here is the recipe: Filling 8 apples, peeled and sliced 1/2 cup white or brown sugar (I used raw sugar...
  16. Angie, that is great. Hopefully your mom will feel much healthier once on she is on the gluten-free diet. I just read in your signature that your daughter has DH. If she has been positively diagnosed with it, there is no doubt that she has celiac disease and needs to be on the gluten-free diet. ONLY celiac disease causes DH, and the gluten-free diet is...
  17. You may see immediate results in an 11 year old, or it might take a week. Why not have her tested, since she is still eating gluten? Unless you know that you guys don't have the 'official' celiac disease genes, that would be a good idea. If she tests positive, then she can't refuse to be on the diet. Otherwise, go the Enterolab route. Her results finally...
  18. Actually, playing with playdough is VERY unsafe for a child with celiac disease. Because it is sticky, and absolutely will collect under fingernails and is very hard to scrub completely off fingers. I don't know how old your daughter is. But young children will put their fingers into their mouths all the time, and they do forget to wash their hands before...
  19. You obviously got glutened. It would be a miracle if that wouldn't have happened with flour all over the place and in the air to breathe it in as well. I don't allow any regular flour in this house. If anybody wants to bake gluteny foods they better do it elsewhere. You can make great gluten-free pizza, and nobody will taste the difference. The only...
  20. It is very likely that she got glutened by the pot, but definitely by the strainer. You can absolutely NOT use a plastic colander for gluten-free pasta that has been used for gluten pasta before. It is not possible to get all the gluten out of the crevices, it is extremely sticky (they make industrial strength glue out of wheat gluten). The same goes for...
  21. It could be a combination intolerance, which are hard to figure out. One of my daughters is intolerant to the combination of tomato and meat, and potato and meat. Did you use grain vinegar? Are you maybe dairy intolerant? I doubt that you got glutened. It was something else in that food entirely I believe, and I suggest you eat all those foods first by...
  22. Both dairy and soy can cause both diarrhea and constipation, as can nightshade foods, rice, eggs, corn, legumes (especially dried ones), as well as ALL grains. In fact, every one of those will cause either D or C in me, sometimes one, sometimes the other.
  23. Gluten intolerance is not an allergy, but an immune reaction. And if your son doesn't have extensive damage to his small intestine YET, he would still grow normally and not necessarily be too thin, either. A wheat allergy is a histamine reaction to wheat (and you can have both, some people here do). The grains containing gluten are wheat, rye and barley...
  24. Excellent, that is good to know, sounds yummy.
