  1. He he he... Nope, mine didn't explode. Do you let yours cool completely before rolling in powdered sugar? That's the only thing I could think of that would make them explode. Too funny! Now I kind of wish I could get mine to explode. That would make for a GREAT avatar!!! I use 1 teaspoon of xantham gum per cup of flour mix. Is that what you use? I...
  2. One Source prenatals are gluten free. I think you can only get them at Wal-mart. They were relatively inexpensive and they were labeled gluten free right on the bottle.
  3. Schar crackers are excellent. They're about as close to a "real" cracker as you're probably going to come. As per the suggestion of preggie pops, they are gluten free, but they're made in a facility that also processes wheat products. Use at your own risk.
  4. I would just add breadcrumbs until the texture felt right. I'll bet this would be really good with Gillian's Italian breadcrumbs. Yum. I haven't tried them yet, but all of Gillians stuff I've tried has been great. When I make these (I got the sausage meat yesterday) I'm going to add garlic, black pepper, and onions. I might add green peppers to half of them...
  5. So glad you've made it through the first year. It gets so much easier after that first anniversary. So... Now you've made my day and I'm going to walk around with a goofy smile all day. Thanks. Oh, and have a wonderful (gluten free) holiday!
  6. You should never gluten yourself just to fit in. Your health is far more important than temporary hurt feelings. I'm sure they will all understand, especially since you have a real medical problem.
  7. Carla, a while back someone posted a recipe to make those little onion things... I think maybe it was Tiffany??? Did you see it? It looked pretty easy.
  8. What are the ingredients?
  9. If you had positive Celiac test results then you have Celiac. There aren't false positives, just false negatives. In addition, you stated that your health improved greatly. This is diagnostic proof in itself.
  10. I would probably sit down with your doctor and explain that you don't feel as though you're getting the care that you deserve. Perhaps present him with some papers on Celiac so he can better educate himself. If he's not willing to work with you, then I would start looking for another doctor. Often though, doctors are so rushed that they don't realize that...
  11. Mmmmmm..... Triscuits... Drooling uncontrollably.
  12. I use one of the Bette Hagman pancake recipes and it is great. I also make croutons out of stale bread using parmesean cheese and garlic powder and italian spices. The bread recipe is also from Bette Hagman's books. If you want good cream of mushroom, you'll probably have to make it yourself. There's a recipe floating around here somewhere. Kinnikinnick hot...
  13. I'm not sensitive to any other ingredients and have tried all of them. I have never gotten sick from any of them, but I did get sick from Bob's Red Mill.
  14. Pre-packaged danishes that are shelf stable and would be able to be shipped. Soft pretzels that could be heated in the oven or microwave like Superpretzels (cheese filled ones would be good too). Hot dogs with buns in single serve packs for school/work lunches. New bagel flavors like cinnamon apple, poppyseed, marble, garlic and herb, etc. Whoopie pies!!...
  15. I know someone who gets fungal infections on their skin. The only sign of this is that their skin peels badly.
  16. Just a little side note... I just tried one of the chocolate chip cookies that I made yesterday afternoon and it is still very soft and yummy. I have never had a gluten free cookie that stayed soft overnight. Yum!
  17. Glad you found a gastro that you like. However, did he mention that your testing will most likely turn up negative since you've been gluten free?
  18. Something nice someone did for me: My husband has been extremely supportive ever since my diagnosis. He has even gone gluten free in our house for me. This week he did the nicest thing ever. I'm always complaining that I don't have enough room in our freezer and fridge for all of the gluten free stuff. This means I have to place small orders and can never...
  19. From www.pioneerthinking.com/eggsub.html
  20. Some are, I'm sure some aren't. I know Wal-mart's GV brand are gluten free. They print it right on the bag. I'm pretty sure Reese's are also gluten free, but you'll want to verify that before digging in.
  21. Happy birthday! I hope your day is wonderful, friend.
  22. This is as close as I could come for those of us in the US. Thanks for the recipe, Nikki!!!
  23. I am eating a fresh "oatmeal" raisin cookie right now and it is SOOOOOOOOOOOOOO good... Here's the recipe. I subbed quinoa for oatmeal 1:1 and it worked out really well both in texture and flavor.
  24. It's the bean flour. I find bean flour repulsive. I use Kinnikinnick flours and they work and taste almost exactly like all-purpose white flour. 2 parts white rice, 2 parts potato starch, 1 part tapioca starch... Add 1 teaspoon xantham gum per cup of flour. I don't think you'll be disappointed. Everything I've made with this flour blend has been amazing.
  25. I use Great Value brand PB cups and chocolate chips. They label gluten free right on the bag. I used Jell-O brand instant pudding, but I believe GV brand is also gluten free.
