For me it definitely wasn't the beans in the flour mix. I got a VERY gluten-like reaction from the flour. I have no other intolerances. I stay far away from Bob's products because I think they have a real cross-contamination issue there. Just my opinion. Not worth the risk for me. -

That's a really good question. When I picture gluten I picture one of those cartoonized commercials where they do they close up of cartoon germs... To me, that's what gluten looks like, those cartoon germs with their amoeba like form and sharp razor-like teeth. -

Riceguy makes a great point about the addictive nature of gluten. I'm sure someone else will get into the discussion of it's similarity to opiates. It's hard to "quit" gluten and the first few weeks can be pretty tough if you get withdrawal symptoms (I did). Ursula pretty much said it all... She has some excellent points. I also wanted to point out that if you're storing her gluten free flours near your wheat flour, they could all be contaminated. Some other things that you may not have thought about: juices/sodas are not always gluten free, Quaker rice cakes are not considered gluten free, and some pre-bagged... -

Kathy Ann, I'm probably just an extreme case, but in my experience all it takes sometimes (not all the time) is the SMELL of glutenous goodies baking to make me sick for a few days. Technically, a scent is made up of many tiny little molecules of the actual thing that you're smelling. If you smell wheat, that means that there are many tiny little wheat molecules... -
Oh boy would that be helpful if someone could answer that lasagna question. Those rice based lasagna noodles are NOT fun to work with.

Yes, as Richard said, it's very possible to only realize you have Celiac Disease later in life. There are many with the disease that never realize they have a problem. If you're really worried about going through another endoscope, you could always skip it and just try the gluten free diet. I never had the scope, though I did have positive bloodwork, and... -

One Source Prenatal made by Perrigo Co. is gluten free and it says gluten free right on the bottle. It's a big ol' pink bottle. I found them at Wal-mart. Congratulations on your pregnancy!!! -

Just a quick FYI, apparently the recall on Red Bridge was due to suspected contamination. Supposedly there was no contamination afterall and beer was returned to all distributors. We bought our second case tonight and have still had no problems with it. -

The jam filled ones are the easiest of the two recipes. It literally took me about 20 minutes total to whip up a batch, including baking time. Here's another recipe that I thought was pretty good. Please keep in mind that Russian Tea Cakes aren't for everyone. They're kind of odd in flavor and texture. These turned out pretty well, definitely a keeper...

Bob's Red Mill has made me sick before, but there are PLENTY of people who have had no reaction at all. I use Kinnikinnick flours as they are processed in a gluten and casein free facility. Okay guys, I've been making Christmas cookies all afternoon today. Here are the recipes that worked really well with gluten free flours... I used this flour blend: 3 parts white rice, 2 parts potato starch, 1 part tapioca starch... Then I added 1 teaspoon xantham gum per cup of flour blend. I'll be adding more recipes as I make more. Red Bridge is already being distributed in a few areas. I believe PA and IN have distribution in some areas. I know we have a major distribution chain carrying it here in the Lancaster/Lebanon area of PA. Keep asking your local distributor, grocery store, restaurant, and bars to carry it. The more requests they get for it, the more likely it will begin popping...
