I use Bette Hagman's rice flour blend: 3 parts white rice, 2 parts potato starch, 1 part tapioca starch... I add approximately 1 teaspoon xantham gum per 1 to 1-1/2 cups of flour blend. It depends on what I'm making. I've found that my pre-gluten-free recipes all turn out about the same when using this blend. Sometimes they even turn out better. -

Yeah, Quaker products definitely made me sick. I would stay away from them. Try Lundbergh, I've never had problems with them and they have flavored ones like apple cinnamon. You can buy them online at www.shopbydiet.com. -

My favorite cookbooks are the ones by Bette Hagman, the gluten free gourmet. However, I must add that if your father is already a trained chef, he should have no problem converting his old recipes to gluten free status. We also had a perfect Thanksgiving, though it was a few days late. We were all sick for Thanksgiving day. I made a whole chicken (I'm not a turkey or ham person) with chicken gravy, onion roasted potatoes, stuffing, and peas. Everything was fabulous! Don't expect anything you've ever tasted before with the cider. It's an acquired taste. I hated it the first few times I drank it. I still don't like it very much, but it's better than nothing when you're at a party or something. The Bard's Tale is phenomenal. I love it! I was never much of a beer drinker before dx, but I LOVE my Bard's Tale. -

Sorghum beer is actually excellent. It tastes exactly like "real" beer. In Pennsylvania we can only get beer in a beer distributor. They can't sell it in gas stations and supermarkets here. It's well worth the special trip though. Bard's Tale Beer is sorghum also and it is fabulous. Tomorrow's the big day when they're supposedly getting the Red Bridge in... -

Patti, if you don't have a candy thermometer, just do the donuts on medium heat (about setting 6) and they should turn out fine. Add the donuts to the oil once water "pops" when it hits the oil, just flick a drop off of your finger. -

For eggplant parm we use Kinnikinnick's crispy coating with fresh eggplant. I bake it rather than fry it. It turns out wonderful, even my two year old daughter loves it. We serve it over Tinkyada spaghetti with Classico tomato sauce. YUM! -

You will need to make rings using aluminum foil. Should be easy enough. The dough is stiff enough that a foil ring should keep it in place while rising. These aren't grainy at all, at least we don't think so. We use Kinnikinnick flours to make them. They definitely don't fall apart easily. They are super good. I'm making more for tonight's dinner. I made onion rings for the first time tonight. They are completely gluten free and delicious. I used Bette Hagman's pancake recipe to coat the onion rings. If you usually don't have symptoms that violent, I would think that it was probably food poisoning. I had food poisoning a few months ago and it was horrible. I was up all night hugging the toilet. That was probably the sickest I've ever been in my life. It took me about a week to get back to normal after that. I hope you're feeling better soon.
